True everyone has an oven, but not every oven is equal! In this overview we offer hints and tips about essential kitchen equipment.

  • Gas Oven vs. Electric: One oven is not the same as the next! Gas ovens and electric produce completely different baking results. Even different manufacturers will vary the outcome of your baked goods. One thing holds true for all ovens, however: They should always be preheated before baking.
    • Temperature: Preheating the oven gives the best results. An oven temperature of 375° F. for cookies produces an acceptable cookie. Lower temperatures could cause a flatter cookie while higher temperatures could produce a crisp outer edge and doughy center.
    • Placement of Pans: For cookies, the baking sheet should be placed on the oven rack in center of oven, baking one pan at a time. The pan should fit on rack with a 1- to 2-inch clearance all around. For Libby’s Pumpkin Pie, the pie plate should be placed in the center of the oven, and for best results, bake one pie at a time. If using a metal pan, place it on a preheated baking sheet. If using a glass pie plate, there’s no need for a baking sheet.

  • Baking Sheets: Dull aluminum baking sheets with only one or two sides are preferred.

  • Electric Mixers: Stand and hand-held mixers are the most common type of mixers used in the average household.

  • Microwaves: Wattage for home microwave ovens can vary from 500 to over 1000 watts.
