A healthy and delicious snack. These muffins make a great everyday breakfast or lunchbox treat.

Servings: 12 muffins

ingredients
1 cup all-purpose flour
1/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup (1 medium) peeled, finely chopped tart apple
3/4 cup water
1/2 cup NESTLÉ® CARNATION® Instant Nonfat Dry Milk
1/4 cup vegetable oil
1 large egg
2 cups bran flake cereal

directions
PREHEAT oven to 400° F. Grease or paper-line 12 muffin cups.

COMBINE flour, sugar, baking powder, salt, cinnamon and nutmeg in medium bowl. Mix apple, water, dry milk, oil and egg in small bowl. Add to flour mixture; stir until moistened. Stir in cereal. Spoon into prepared muffin cups, filling 2/3 full.

BAKE for 12 to 15 minutes or until wooden pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm.

Moist and tasty

These are great for an on-the-go breakfast. I substituted bran cereal and added 1/2 cup of dried cranberries. Dee-lish!

Healthy addition to breakfast routine

I really love to have healthy muffins on hand (fresh or in the freezer), and these were a great addition to my line-up. I used half whole-wheat and half regular flour and it was fine. You would never know there were bran flakes in here!

Apple bran muffins are pretty good. My husband really enjoyed them. I'm more of a blueberry muffin girl but they weren't that bad.

I liked these mufffins a lot. Easy to make, recipe was exact. I personally may cut back on the spices a little, that is just me.

sooooo good

These quite easy muffins are great made the day before using bran flake cereal to take camping, traveling, for picnics and for packing lunches. I suggest making 24 muffins if you want any for yourself. They will disappear quickly. They are sooooo moist and tasty.
