Apple Brown Rice Stuffing

Healthy brown rice instead of boring white bread stuffing. Crisp apples complement the nutty flavor of the brown rice and bran.

Preparation Time: 10 mins
Cooking Time: 40 mins

Servings: 8

ingredients Ingredients
1 1/2 cups uncooked brown rice
3 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice, divided
2 teaspoons margarine
1 apple, diced
1/2 cup chopped onion
1/2 cup sliced celery
1/3 cup raisins
1/2 teaspoon poultry seasoning
1/4 teaspoon dried thyme, crushed
1/4 teaspoon ground black pepper
1/3 cup bran
1/3 cup slivered almonds

directions Directions
PREPARE rice according to package directions, using 3 1/4 cups Juicy Juice for the liquid.

MELT margarine in large skillet over medium-high heat. Add apple, onion, celery, raisins, poultry seasoning, thyme and pepper; cook, stirring occasionally, until vegetables are crisp-tender. Stir in rice, bran, nuts and remaining 1/4 cup Juicy Juice.

USE as stuffing for poultry or pork roast, or place in greased 13 x 9-inch baking pan and bake in preheated 350° F oven for 35 minutes.

Great Pork Chop Stuffing

Used as pork chop stuffing with 1/2 apple juice and 1/2 water. Everyone liked it. Used the leftover stuffing for lunch but added more raisins, almonds, bran and apple juice.

Apple Brown Rice Stuffing

We really like rice so when I made this but I didn't use it as stuffing; it made a gread side dish. This would go well with most meats but it is especially good with chicken.

brown rice stuffing

I'm always looking for a new recipe outside of the box for brown rice. This one fit the menu. It was great w/ the pork roast I served the first time and it was great to take the leftovers for lunch the next day.

okay

I was a little disappointed in this recipe--it was way to sweet. Next time I will replace most of the apple juice with water or chicken broth.
