ingredients
1 pkg. (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
2 cups DREYER'S® or EDY’S® SLOW CHURNED™ Vanilla or Chocolate Light Ice Cream, softened
NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels and/or sprinkles (optional)

directions
PREPARE cookies according to package directions. Cool completely.

PLACE a heaping tablespoon of ice cream on flat side of 1 cookie; top with flat side of second cookie to make a sandwich. Place morsels or sprinkles on plate. Roll sides of sandwiches in morsels or sprinkles. Serve immediately or wrap tightly in plastic wrap and freeze.

Ice Cream Cookie Sandwich

What a great treat for a hot summer day. I used my homemade chewy chocolate chip cookies (I won't use anything but) and alternated between vanilla and chocolate ice cream. They were fantastic! My husband and son just couldn't get enough. I have a 4th of July party coming up and everyone always looks forward to my homemade cookies, I have a feeling I'll be making these as an added treat!

Great recipe for kids!

This recipe is perfect for a hot summer day, and here in TX we have those all the time. These cookie sandwiches are easy to make, but if you don't hurry it could get messy. The kids love helping out with these cookie sandwiches and the satisfaction they get from making their own dessert is great. These cookies are delicious and so simple. I recommend them for anyone with or without kids.
