Ingredients
1 package
(9 ounces)
Spinach Souffle, prepared according to package directions
1 package
(3 ounces)
cream cheese, softened
1/2 cup
plus 1 tablespoon
(about 2 1/2 ounces) grated Parmesan cheese, divided
1/4 cup
mayonnaise
2 tablespoons
chopped green onion
Tortilla chips
TOPPINGS: diced tomatoes, chopped green onions and shredded Monterey Jack cheese
Directions
PREHEAT oven to 350° F.
COMBINE spinach soufflé, cream cheese, ½ cup Parmesan cheese, mayonnaise and 2 tablespoons green onion in a medium bowl. Transfer to a small baking dish; sprinkle with 1 tablespoon Parmesan cheese. Place baking dish in center of baking sheet or ovenproof platter.
ARRANGE tortilla chips around dip. Sprinkle chips with tomatoes, chopped green onions and Monterey Jack cheese.
BAKE for 20 to 25 minutes or until dip is hot and Monterey Jack cheese is melted.

DELISH!!!
Now this is a great dip! I've made this numerous times and it is a winner and super easy to make. I serve it with Fritos and it's fantastic.

Great!
I made this for a get-together for friends. Everyone loved it and asked for the recipe. Used hawaiian bread for dipping instead of chips (they burnt). Also omitted the onions and it still tasted Awesome!!!

A winner every time
I've made this twice now and have gotten rave reviews. I substitute sour cream for mayo and use 4oz of cream cheese. I always add chopped artichoke hearts and a clove of minced garlic. The second time I added bacon bits and used italian marinated artichoke hearts. There are so many variations you can make, and it tastes great...this will definitely be served at my Super Bowl party!

big hit! we added artichoke...
I made this to use up the spinach souffle in the freezer, which my kids wouldn't touch. I threw it together at the last minute and everyone LOVED it. It was one of the few times there was nothing left to save and the bowl was licked clean.
Now everyone has asked for it again at the New Year's Eve party!
I didn't have green onion either, so i sauteed some yellow onion, chopped very fine, with a dab of diced garlic.
I realized at the last minute that this *wasn't* a spinach-artichoke dip, so we added artichoke at the last minute and it was delicious.

Big Hit!
I made this last night for a family gathering, and everyone loved it! Even my eleven-year old grandson! I didn't have green onion, so I used yellow onion, chopped very finely, but it was excellent! Every last tostado was eaten!
