2 1/2 tablespoons brown sugar blend (such as SPLENDA)
2 tablespoons ketchup
2 tablespoons dark rum
1 lime, juiced
1 tablespoon butter
2 teaspoons finely chopped ginger
1 teaspoon NESCAFÉ TASTER'S CHOICE House Blend 100% Pure Instant Coffee Granules
1/8 teaspoon ground allspice
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves
2 large cloves garlic, crushed
1 teaspoon olive oil
1/2 teaspoon salt
1/8 teaspoon ground black pepper

directions Directions
COMBINE sugar blend, ketchup, rum, lime juice, butter, ginger, coffee granules and allspice in small saucepan. Bring to a gentle boil; stir until coffee and sugar blend are dissolved. Remove from heat; set aside.

TRIM chicken of any visible fat. With sharp knife, make two diagonal slits about 1/2-inch deep on the top side of each breast.

COMBINE garlic, oil, salt and pepper in small bowl. Rub mixture all over chicken. Arrange chicken slit-side-up on rack in shallow baking pan. Brush chicken with glaze; reserve remaining glaze. Refrigerate for 30 minutes.

PREHEAT broiler.

BROIL chicken for 5 minutes. Turn chicken over; coat with reserved glaze. Broil for an additional 4 to 5 minutes. Turn chicken over again; coat with glaze. Broil for an additional 2 minutes or until tops are sizzling and brown.

LOVE IT!!!!

I love this chicken. My whoel family ate it right up! I did omit the coffee too, and it came out wonderful. I did use 3 Tbp of brown sugar, and it came out nice and thick. I also only used 1 tsp of ginger, just because I do not care for ginger to much. Will make again!

Plate-Licking Good

This chicken was excellent! My husband is actually from the Caribbean, and he loved it, and my 2 year old cleaned her plate, and that's saying something! It did need a little longer to cook than noted on the thicker pieces, but it was sooo amazingly tender. I listened to earlier reviews and nixed the coffee, and I used twice the amount of fresh garlic called for. I used pre-squeezed lime juice because I had it on hand. It was perfect, but I want to make it even better. Next time, I'm going to add more brown sugar for a thicker glaze, and use fresh lime to get some of the pulp in there. Don't skimp on the rum! I was afraid because it smelled so strongly at first, but now I wish I'd used more. It was polished off with no leftovers and even the serving plate was licked clean!

AMAZING with Chicken or Pork!!!!!!

I have made this recipe several times already and each time, it gets better and better. I omitted the allspice and ginger because I don't care for them. I have also used regular bbq sauce, as well as a Hot Pepper Chipotle Raspberry saucein place of ketchup and it still came out amazing. This is definitely a family favorite now! I tend to make it at least once a week, alternating pork and chicken. It's amazing and one of the best recipes I have found on this site!
