These pancakes have a duo personality; they make a hearty breakfast or also serve as a side dish for dinner.

ingredients
4 whole green apples, cut into eighths
2 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice
6 red potatoes, peeled and grated
1 onion, peeled and grated
1 large egg
10 tablespoons corn oil, divided
1/4 teaspoon salt
1 cup sour cream

directions
SIMMER apples (not peeled, cored or seeded) in Juicy Juice for 30 minutes or until very soft. Drain, reserving the liquid. Push apple through sieve and discard peel and seeds. Simmer liquid to reduce by half and stir into applesauce.

COMBINE potato and onion in large mixer bowl. Beat egg with 2 tablespoons oil and salt; combine with potato mixture.

POUR enough remaining oil into a large skillet to cover bottom with about 1/16 inch of oil. Heat to very hot but not smoking, and drop potato mixture in by heaping tablespoons. Flatten immediately so pancakes are about 4 inches in diameter (smaller pancakes will burn). Try to keep them neatly round. Fry for 3 to 5 minutes or until golden brown; flip and brown other side. Drain on paper towels. Serve with applesauce and sour cream.

Potato Pancakes

My Mom used to make these when my 4 brothers and I were growing up so the name wasn't that new to me. I just love these. I use a blender and to cook the apples I use sugar free diet sprite or any diet drink. My father in law is a diabetic and I learned this trick so he can eat fried apple pies. Taste just like the real thing. I peel my apples, add the one can of sugar free diet sprite, cover and let it simmer till the apples are done. Add more diet sprite if needed during cooking. I mash up or put in my blender. Yummy. Thanks for this recipe, will make again......

Best "Latkes"

I have been making Latkes for years always frying them in a lot of oil. I never added oil to the batter, but this time following your recipe I did. I used much less oil to fry and they were not only delicous but very light.

Latkas (as it is said in the Jewish language) are awesome!!!! They make me feel all tingly inside with warm pleasure. Nice and tasty. Also good with salsa and sour cream. EAT IT !!!

Simple and Excellent!

I've had latkes (potato pancakes) all over the place and these are by far the best I have had. I didn't prepare the applesauce but instead just served them with sour cream and French toast. They are especially easy to prepare if you have a food processor, sure beats grating a bunch of potatoes and an onion (which had me crying for a good 5 minutes).
