How to Make Banana Nut Bread

Moist and delicious, this banana nut bread is a great way to start the morning. Save your ripe bananas for this recipe by peeling and storing them in the freezer. Makes 2 loaves.

Tips:

  • Bananas are one of the few fruits that truly ripen once they're off the tree. The longer they sit, the more sugars will develop from their natural starch. This simple recipe depends on bananas with the highest sugar content possible.
  • The bananas for this recipe need to be completely ripe and soft. Let them sit out at room temperature until the skins get almost completely brown. The fruit within will be very soft and sweet.

Steps:

  1. PREHEAT oven to 350° F. Grease two 9 x 5-inch loaf pans.
  2. MASH bananas in a bowl (Image 1).
  3. COMBINE flour, dry milk, baking powder and cinnamon in medium bowl.
  4. Beat eggs, sugar and vegetable oil in large mixer bowl on medium speed until well blended (Image 2); add bananas and combine well. Gradually combine flour and banana mixture (Image 3); stir in nuts (Image 3). Spoon into prepared pans (Image 4).
  5. BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

  • 1 1/4 cups NESTLÉ® CARNATION® Nonfat Dry Milk
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 3 1/2 (about 7) cups very ripe bananas
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup chopped walnuts
