Angel Hair Pasta with Chicken & Mini-quiches

The amazing and refreshing flavors in the pasta entrée paired with simple-to-prepare accompaniments make this combination a great choice for weeknights or easy entertaining.

Ingredients:

  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
  • 3 large eggs, beaten
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups (8 oz.) shredded mild or sharp cheddar cheese
  • 2 cups chopped, frozen broccoli, thawed and drained
  • 1/2 cup chopped red bell pepper

Directions:

PREHEAT oven to 350° F. Grease and lightly flour twelve 2 1/2-inch muffin cups.

WHISK evaporated milk, eggs, flour, salt and black pepper in medium bowl until blended. Stir in cheese, broccoli and bell pepper. Spoon 1/4 to 1/3 cup of mixture into each prepared muffin cup, filling almost to rim*. Stir mixture frequently to evenly distribute ingredients.

BAKE for 23 to 28 minutes or until knife inserted near centers comes out clean and tops are lightly browned. Cool in pans for 15 minutes. Run knife or small, flat spatula around inside edges of muffin cups. Carefully remove quiches.

*NOTE: Number of quiches that you get will depend on the size of your muffin cups. Bake time may need some adjusting.

TIPS:
• Quiches can be made ahead and frozen. To reheat, place on baking sheet and bake in preheated 325° F. oven for 25 to 30 minutes or, place 2 to 4 quiches on microwave-safe plate and microwave on MEDIUM-HIGH (70%) power for 2 1/2 to 5 minutes or until hot.

  • 1 package (9 ounces) BUITONI Refrigerated Angel Hair Pasta
  • 1 1/2 cups cooked diced chicken
  • 1/3 cup butter, melted
  • 2 to 3 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley or 1 teaspoon dried parsley
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon garlic powder

Directions:

PREPARE pasta according to package directions.

TOSS pasta with chicken, butter, lemon juice, parsley, marjoram and garlic powder. Season with salt and ground black pepper, if desired.

    We were starving. Had on hand all but marjoram (bought it once, hardly used it, tossed old, almost full jar), including leftover angelhair pasta & 13-oz can of chickie. Doubled the sauce, added garlic salt + salt & freshly ground pepper. Not exactly gourmet, but a surprisingly satisfying, yummy, balanced dish.     I loved this recipe! I didn't use marjoram because I didn't have any and only used dried parsley and it turned out great! Instead of melting the butter and then adding it, I just threw the cold butter into the pan with the cooked chicken and then added the other ingredients once it melted. I also used regular angel hair pasta. I think this would be good with ANY pasta, but I really like how quickly angel hair pasta cooks. I will definitely make this again and again.

    This was an easy meal I will make again. I made it with whole wheat pasta. I also mixed some tofu (diced very small) in with the chicken and marinated them for a couple of hours in a mixture of white wine, a little lemon juice, and herbs. Overall it shaped up to be an easy, healthy meal with very little prep work.

    This is a keeper, my husband is not a pasta fan and he had several helpings. I made it the following week for my family and they all loved it. It was very easy, next time I make a roasted chicken I will put an extra one in the oven, remove the cooked chicken and freeze for this recipe.

    Like someone said earlier, I minced a couple cloves of garlic (instead of garlic powder) and then used half the butter, and replaced the other half with olive oil, keeps it creamy, but cuts the bad fat in half! Also added in some roughly chopped capers, GREAT DISH!

    This was somewhat difficult to make. I liked it better as cold left overs than warm. I had to cool down the noodles in order for them not to over cook and inorder to mix the ingredients. My husband liked it more than I, but I prefered it cold.

    I suggest making this with a smaller amount of Olive oil in the place of the butter and make pasta whole wheat. 1/3 cup of butter is too high in my book.

    This is very quick to prepare and healthy, but a little plain the first time. The next time I added just one box of Green Giant frozen peas in sauce, and man did that do the trick! My whole family loved it, from age 18 to 81! Cooked regularly now. In fact, I precook and freeze the chicken breasts ahead to REALLY have a quick meal! Goes great with a salad and garlic bread.

Ingredients:

  • 3 cups (about 3 medium) coarsely chopped red or other waxy potatoes
  • 1 cup (1 medium) peeled and coarsely chopped parsnip
  • 3 cups fresh broccoli and/or cauliflower florets
  • 3 tablespoons butter or margarine, divided
  • 2 tablespoons all-purpose flour
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Fat Free Milk
  • 1 MAGGI Vegetable Flavor Bouillon Cube
  • 1/8 teaspoon ground white pepper
  • 1/4 cup seasoned dry bread crumbs

Directions:

PREHEAT oven to 350º F.

MICROWAVE potatoes and parsnip in covered, medium, microwave-safe casserole dish on HIGH (100%) power for 9 minutes; drain. Return to dish; top with broccoli.

MELT 2 tablespoons butter in small saucepan over medium heat. Stir in flour; cook, stirring constantly, for 30 seconds. Gradually stir in evaporated milk, bouillon and pepper; cook, stirring occasionally, for 3 to 4 minutes or until bouillon is dissolved and sauce is slightly thickened. Pour sauce over vegetables.

MICROWAVE remaining butter in small, microwave-safe bowl on HIGH (100%) power for 10 to 20 seconds or until melted. Stir in bread crumbs until combined. Sprinkle over vegetables; cover.

BAKE for 30 minutes. Uncover; bake for an additional 10 minutes or until top is golden brown.

  • CAKE
  • 6 oz. NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Baking Bar, melted and cooled
  • 3/4 cup 1 1/2 sticks butter or margarine
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • CREAMY CHOCOLATE FROSTING
  • 1/2 cup (1 stick) butter or margarine
  • 2 oz. NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Baking Bar
  • 2 1/2 cups powdered sugar, divided
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 2 to 3 tablespoon milk

Directions:

PREHEAT oven to 350° F. Grease two 9-inch-round baking pans or one 13 x 9-inch baking pan.

FOR CAKE:
BEAT
sugar, butter and vanilla extract in large mixer bowl. Add eggs; beat for 1 minute. Beat in melted chocolate. Combine flour, baking soda and salt; beat into creamed mixture alternately with milk.

POUR into prepared baking pan(s).

BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool for 20 minutes; invert onto wire rack(s) to cool completely.

FROST with Creamy Chocolate Frosting.

FOR CREAMY CHOCOLATE FROSTING:
MICROWAVE
butter and baking bar in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. The bar may retain some of its shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until melted. Cool to room temperature.

BEAT 1 cup sugar, vanilla extract and salt into chocolate mixture until creamy. Gradually beat in remaining sugar alternately with milk until smooth. Makes 2 cups.
