Mexican Spiced Coffee (Café de Olla) will help to warm up the holiday season. This delightful drink features an alluring blend of brown sugar, zesty cinnamon and creamy NESTLÉ CARNATION Evaporated Milk. Great for entertaining.
Ingredients:
4 cups water
1/2 cup packed piloncillo or packed dark brown sugar
2 medium cinnamon sticks
1/4 teaspoon anise seeds (optional)
2 whole cloves (optional)
3 to 4 tablespoons NESCAFÉ CLASICO Instant Coffee Granules
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
Directions:
COMBINE water, piloncillo, cinnamon sticks, anise and cloves in medium saucepan. Heat over medium-high heat, stirring occasionally, until boiling. Reduce heat to low; cover. Cook for 15 minutes. Remove from heat; stir in coffee granules. Cover; steep for 5 minutes.
HEAT evaporated milk in small saucepan over medium-high heat. Whisk constantly until milk is frothy and just comes to a boil. Remove from heat.
STRAIN coffee through a fine sieve into individual serving cups. Serve immediately with frothed milk on the side.

I love the spicy flavor of this coffee! It can be served as "dessert" to company. I substituted a granulated brown sugar with the strong spices and it was very tasty, you could not tell that it was not real brown sugar.

Put this hearty egg, cheese and sausage casserole into the oven early on a weekend morning and it will be ready by the time the whole family is up. An easy holiday brunch recipe! For extra variation try different cheeses, or add some ham or bacon bits.
Ingredients:
1 pkg. (16 oz.) bulk pork sausage, cooked, drained and crumbled
4 cups cubed day-old bread
2 cups (8 oz.) shredded sharp cheddar cheese
2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
10 large eggs, lightly beaten
1 teaspoon dry mustard
1/4 teaspoon onion powder
Directions:
GREASE 13 x 9-inch baking dish. Place bread in prepared baking dish. Sprinkle with cheese.
COMBINE evaporated milk, eggs, dry mustard and onion powder in medium bowl. Pour evenly over bread and cheese. Sprinkle with sausage. Cover; refrigerate overnight.
PREHEAT oven to 325° F.
BAKE for 55 to 60 minutes or until cheese is golden brown. Cover with foil if top browns too quickly. Season with ground black pepper.

A drizzle of white chocolate on top gives these Orange Brunch Muffins just the right amount of sweetness to make them a true treat. Serve them for a quick morning bite or pass them around as an appetizer for a hearty brunch.
Ingredients:
3 cups all-purpose baking mix
3/4 cup all-purpose flour
2/3 cup granulated sugar
2 large eggs, lightly beaten
1/2 cup plain yogurt
1/2 cup orange juice
1 tablespoon grated orange peel
2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Premier White Morsels, divided
1/2 cup macadamia nuts or walnuts
Directions:
PREHEAT oven to 375º F. Grease or paper-line 18 muffin cups.
COMBINE baking mix, flour and sugar in large bowl. Add eggs, yogurt, juice and orange peel; stir just until blended. Stir in 1 1/3 cups morsels. Spoon into prepared muffin cups, filling 3/4 full. Sprinkle with nuts.
BAKE for 18 to 22 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 10 minutes; remove to wire racks to cool slightly.
MICROWAVE remaining 1/3 cup morsels in small, heavy-duty plastic bag on MEDIUM-HIGH (70%) power for 1 minute; knead. Microwave at additional 10- to 15-second intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over muffins. Serve warm.

these were easy to make and the ornage flavor is exceptional. I substituted chocolate chips for the white chocolate morsels and added 1/4 cup coconut for a little extra flavor and texture. I also substituted vanilla yogurt for the plain yogurt as the store was out of the plain.

My family just loves the bakery orange/cranberry muffins. So when I saw this recipe I had to try it. I left out the white chocolate and nuts, and added 1/2 cup chopped dried cranberries instead. Everyone enjoyed their favorite muffin, only instead of from a bakery I made them myself.

What a great way to have orange and yogurt together. Great for snack or breakfast.My family just loved them with orange juice and eggs. It made a great breakfast. Then in the afternoon they were a great snack with a cup of coffee. A healthy but good food. I can't wait to fix them again. Just thinking about them makes me hungery. I've always love orange. Now, I have another item I can fix with orange in it. I may try drissling a little chocolate on the top of the muffins next time. I think that may add a little special kick to them. Chocolate does'nt hurt anything.

...as you may wish to do. These are so good, one medium-sized is not enough. A big one will satisfy you, however. Served my family a basket of muffins, pitcher of fresh cold milk, a pot of coffee, and some poached eggs. Fabulous! and very easy to make. Thank you for this recipe, which is definitely a keeper.

This creamy, smooth Cinnamon-Vanilla Sauce with Fresh Fruit recipe is perfect to serve anytime. Try it as a starter, or use as a dessert, too.
Ingredients:
1/2 cup granulated sugar
2 tablespoons cornstarch
2 cinnamon sticks
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 1/2 teaspoons vanilla extract
6 cups assorted fresh fruit (apples, bananas, grapes, mangoes, papayas, peaches, and/or strawberries)
Ground cinnamon, (optional)
Directions:
COMBINE sugar, cornstarch and cinnamon sticks in medium saucepan. Gradually stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens. Remove from heat and remove cinnamon sticks; stir in vanilla extract. Refrigerate for 2 hours or until well chilled. Makes about 1 1/2 cups.
ARRANGE fruit in dessert dishes. Top with sauce. Sprinkle with cinnamon, if desired.
TIP: Refrigerate leftover sauce in covered container for up to 3 to 4 days.

My family didn't care for this one. The thickness of the sauce and the heaviness of the cinnamon took away from the flavor of the fresh fruit, rather than add to it. I would suggest using less corn starch and perhaps a little nutmeg with the cinnamon.

I read a few rating comments prior to making this sauce, so I prepared to make adjustments for thickness and richness. I made 2 versions- an original recipe, and one with less cornstarch and fat free evaporated milk.
In agreement with other tasters, the original was a bit much for fresh fruit, but it was Great served warm with warm spiced peaches and pears.We topped it off with nutmeg rather than cinnamon.
The lighter version was much better on fresh sliced fruit, but I think with strawberries and grapes, we would have preferred to omit the cinnamon sticks

This was good, but I thought it was too thick and rich for fresh fruit. While I ate it, I thought it would be much, much better as a sauce for bread puddings, apple cakes, or add a touch of brandy and use it over baked apples.
