Black bean soup seasoned with spicy salsa, cumin and lime is perfect on chilly winter evenings. Served with a dollop of plain yogurt and a side of steaming tortillas this soup hits the spot.
Ingredients:
2 cans (16 ounces each) black beans, undrained, divided
1 cup water
3/4 teaspoon MAGGI Instant Chicken Flavor Bouillon
Nonstick cooking spray
1 small onion, chopped
1 teaspoon bottled minced garlic
1 cup bottled chunky salsa
1 tablespoon lime juice
2 teaspoons ground cumin
1/4 teaspoon crushed red pepper (optional)
1/3 cup plain yogurt (optional)
Fresh cilantro leaves
Directions:
PLACE 1 can beans with liquid, water and bouillon in blender or food processor; cover. Blend until smooth. Coat large saucepan with nonstick cooking spray. Heat over medium-high heat. Add onion and garlic; cook, stirring occasionally, for 4 to 5 minutes or until onion is tender.
ADD blended bean mixture, remaining beans with liquid, salsa, lime juice, cumin and crushed red pepper. Bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 25 to 30 minutes. Serve topped with yogurt. Garnish with cilantro.
NOTE: Substituting 1 MAGGI Vegetarian Vegetable Flavor Bouillon Cube for the chicken bouillon makes this tasty soup vegetarian.

Very easy to make, very good soup. I used a lime flavored salsa and Bush's brand seasoned black beans. Gave the soup a little kick, which was great.

I used Vegetable broth (instead of water and bouillion) and no-salt Black Beans. Did not compromise the taste at all - it is EXCELLENT!!

You can use vegetable broth instead of the chicken bouillion, it still tastes very good!

Amazing flavour!

This is one of my favourite dishes. I use diabetic salsa (or homemade) for my father. I started making new recipes for him when he was first diagnosed and it became an instant favourite! Even my three year old asks for seconds of this one. It's a sure-fire crowd pleaser. I wouldn't recommend it for sleep-overs though. This is one for those who know they will be sleeping alone the night they eat it. LOL! ;-)

So Easy To Make!

This recipe is quick and yummy. I added some corn towards the last 5 minutes of the cooking time and it turned out great! I think even my husband will like this recipe and he hates beans. I didn't have Salsa so I threw in some finely chopped tomatoes and 1 green chilli pepper. Its so good!

healthy and tasty dose of fiber
jenny from

I love this recipe! However, I did alter it a bit. I used dry bag black beans instead of canned to avoid higher sodium. It turned out great, but it does take more time to prepare the beans. I added shredded cheese to the final product with sour cream instead of yogurt on top. Next time I make it I may add black olives. An alternate idea is to use this soup as a tortilla chip dip for parties because when I made it, it came out on the thicker side. I will try this next time I have guests. OH..and only a 1/4 cup serving of black beans equals almost a 60% daily value of fiber as well!!!

Best Black Bean Soup Ever!
Robyn from

This is an excellent, easy and delicious recipe! I was reading thru the other reveiws, and I do not understand why so many of them suggests to blend only HALF the beans......... the recipe clearly states to do just that!!!! Maybe they misunderstood the directions, but this is excellent just the way the recipe reads...... a keeper for sure!!

Incredibly Delicious
Kathy from
Ft. Walton Beach, FL
I didn't "know" about black beans until my son lived in Ft. Lauderdale and took me to eat at a Cuban restaurant. This recipe, with some rice added, is just as tasty as the black beans served at the restaurant. I have also added sliced smoked sausage to it; with crusty bread it is a meal to be proud of! We love it!
-
Unbelievable!
Roxanne Hagy from

I cannot believe a soup this easy to prepare is so yummy! The texture is perfect, the taste is "restaurant" quality, and it's easy to adjust to your taste. Too spicy? Use mild salsa. Not spicy enough add a little hot salsa! Awesome and perfect for a rainy day.

This was excellent. Have made it several times allready. Made it twice according to the recipe (but only blended half the beans as someone suggested). The third time I added cooked, cut-up chicken breast and served it over rice. A very tasty low fat meal that I am going to make again!

I LOVE this recipe. If you add sour cream and grated sharp cheddar cheese, and serve with warm tortillas, it is a terrific winter dinner. I don't care for onions so I leave them out and just use whatever is in the salsa--it still tastes wonderful.

I find the canned sweet potatoes way tooo sweet. I bake fresh sweet potatoes wrapped in aluminum foil at 400 until a fork comes out clean (about 30 min). You can add more brown sugar for your own taste. I also add golden rasins, coconut flakes and pecans to my souffle as well as 1/4 C of kulua. Then add either pecans or marshmallows on the top.

I got this recipe last minute from a friend this year. As I had already bought fresh sweet potatoes, I baked and scooped them for the recipe. I made this dish to bring to a Thanksgiving dinner and it was a huge hit!! I followed the directions exactly, except at the end, in addition to sprinkling the top with pecans, I also sprinkled some extra brown sugar!! It was really a cinch to put this recipe together, and it made a lovely presentation as well!! I cooked it all the way, then the hostess popped it in her over to keep warm and it served beautifully! It was very light and with just the right amount of sweetness! The pecans on top gave it a nice crunch that went perfectly with the smooth texture of the souffle! I am definitely making this again for Christmas dinner!

My family enjoys sweet potato casserole. Ones I have made in the past usually call for molasses which are very good. What I liked best about this souffle is that it wasn't overly sweet. I LOVE shortbread type cookies. I like bar type cookies. Well this it the little bit of heaven I have looked for. A great shortbread and a top that is light, crunchy and OHHHH so good.
I think I may have to try these with a semisweet chocolate next time, and possibly this recipe is calling for some macadamia nuts with the white chocolate.. Oh the possibilities are endless aren't they??????

This is one of my favorite Nestle recipes. I've tried it w/ semi-sweet chips before. Also, I usually use peanuts. It's always good! I even freeze them and eat them later - which, surprisingly, despite the delicate meringue, works fine - they still taste great.

STEPHANIE SLOAN from
RANCHO CORDOVA, CA
I really like this one but I would say only make it if you have a mixer other wise the Meringue would be way to hard to make but It is really reach and Very good I used pecans for the nuts and it was Awesome I really really liked it and so did my friends at work every one really enjoyed them but you cant eat to may because of how sweet it is and the Crust just falls apart in your mouth I would have to say this is now one of my favorites.

These white chocolate meringue bars are so scrumptious that it is impossible to merely eat one! I made them for an Easter dessert and the entire family loved them. Our oldest daughter even took some with her for the drive back to PA; she loves white chocolate! They will be a permanent family dessert bar.

Nestles' has done it again!
DEE SAPP from
ROSAMOND, CA
Thumbs up! Another great dessert bar. The family was invited over for Easter dinner at my daughters in-laws. Since they know I love to bake, I brought the dessert. The dessert bars are easy and quick to make. All ingredients I had on hand. I found that I was a bit short of white chips and had to improvise by adding some of the swirl chips I had left over from the Swirled Cheesecake Nibbles recipe I made a week ago. The dessert bars were a hit! Thanks Nestle!

I made these bars for a party, they tasted good but when I whipped the egg whites and brown sugar they did not want to form the stiff peaks. So I just spooned the meringue instead of spreading it on top.

Melts in your mouth!
Kate Amatuzzo from
Erie, PA
These bars are simply amazing. The light meringue topping just floats away the second you put it in your mouth, and the shortbread bottom is to die for...I wondered if the recipe had called for too much butter in the crust, but this is not the case. The two sticks of butter makes the bottom so rich and decadent! Instead of nuts, I used crispy candy coated chocolates, which also made the bars colorful and appealing to the eye. The meringue, however, really flaked a lot while cutting the bars, which may be remedied by extra cooking. The bars have a nice consistency, and are very thick...one little bar is all you would need for a serving...plus a scoop of ice cream. I will be making these bars again and again, with a different special ingredient each time!
