Chicken Milanesa & Spicy Black Bean Soup

Ingredients:

2 cans (16 ounces each) black beans, undrained, divided
1 cup water
3/4 teaspoon MAGGI Instant Chicken Flavor Bouillon
Nonstick cooking spray
1 small onion, chopped
1 teaspoon bottled minced garlic
1 cup bottled chunky salsa
1 tablespoon lime juice
2 teaspoons ground cumin
1/4 teaspoon crushed red pepper (optional)
1/3 cup plain yogurt (optional)
Fresh cilantro leaves

Directions:

PLACE 1 can beans with liquid, water and bouillon in blender or food processor; cover. Blend until smooth. Coat large saucepan with nonstick cooking spray. Heat over medium-high heat. Add onion and garlic; cook, stirring occasionally, for 4 to 5 minutes or until onion is tender.

ADD blended bean mixture, remaining beans with liquid, salsa, lime juice, cumin and crushed red pepper. Bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 25 to 30 minutes. Serve topped with yogurt. Garnish with cilantro.

NOTE: Substituting 1 MAGGI Vegetarian Vegetable Flavor Bouillon Cube for the chicken bouillon makes this tasty soup vegetarian.

    Amazing flavour!

    This is one of my favourite dishes. I use diabetic salsa (or homemade) for my father. I started making new recipes for him when he was first diagnosed and it became an instant favourite! Even my three year old asks for seconds of this one. It's a sure-fire crowd pleaser. I wouldn't recommend it for sleep-overs though. This is one for those who know they will be sleeping alone the night they eat it. LOL! ;-)

    This recipe is quick and yummy. I added some corn towards the last 5 minutes of the cooking time and it turned out great! I think even my husband will like this recipe and he hates beans. I didn't have Salsa so I threw in some finely chopped tomatoes and 1 green chilli pepper. Its so good!

    I love this recipe! However, I did alter it a bit. I used dry bag black beans instead of canned to avoid higher sodium. It turned out great, but it does take more time to prepare the beans. I added shredded cheese to the final product with sour cream instead of yogurt on top. Next time I make it I may add black olives. An alternate idea is to use this soup as a tortilla chip dip for parties because when I made it, it came out on the thicker side. I will try this next time I have guests. OH..and only a 1/4 cup serving of black beans equals almost a 60% daily value of fiber as well!!!

I was reading thru the other reveiws, and I do not understand why so many of them suggests to blend only HALF the beans......... the recipe clearly states to do just that!!!! Ingredients:

1 cup plain bread crumbs
1 packet (2.29 ounces) MAGGI Creamy Corn Soup Mix
2 tablespoons finely chopped fresh parsley or cilantro
2 large eggs, lightly beaten
2 tablespoons milk
8 (about 2 1/2 pounds total) boneless, skinless chicken breast halves, pounded to 1/4-inch thickness
1/4 cup vegetable oil

Directions:

MIX bread crumbs, corn soup mix and parsley in shallow dish; set aside. Mix eggs and milk in a separate shallow dish.

DIP chicken pieces in egg mixture, then in crumb mixture, turning to evenly coat both sides with the crumb mixture.

HEAT oil in large skillet over medium-low heat. Carefully place breaded chicken pieces one at a time in oil and cook for 2 to 3 minutes on each side or until golden and cooked through. Drain on paper towels and serve immediately.

    2 cans (29 oz. each) sweet potatoes, packed in light syrup, drained
    3/4 cup NESTLÉ® CARNATION® Evaporated Milk
    1/2 cup packed brown sugar
    2 large eggs
    2 tablespoons butter or margarine, melted
    3/4 teaspoon pumpkin pie spice
    1/2 teaspoon salt
    1/3 cup chopped pecans

    Directions:

    PREHEAT oven to 350º F. Lightly grease 3-quart casserole.

    PLACE sweet potatoes, evaporated milk, sugar, eggs, butter, pumpkin pie spice and salt in food processor or blender; cover. Process until smooth. Pour into prepared casserole; sprinkle with nuts.

    BAKE for 40 to 45 minutes or until golden brown.

      I find the canned sweet potatoes way tooo sweet. I bake fresh sweet potatoes wrapped in aluminum foil at 400 until a fork comes out clean (about 30 min). You can add more brown sugar for your own taste. I also add golden rasins, coconut flakes and pecans to my souffle as well as 1/4 C of kulua. Then add either pecans or marshmallows on the top.

    Ingredients:

    CRUST
    2 cups all-purpose flour
    1/2 cup powdered sugar
    1 cup (2 sticks) butter, softened
    TOPPING
    2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Premier White Morsels
    1 1/4 cups coarsely chopped nuts, divided
    3 large egg whites
    1 cup packed brown sugar

    Directions:

    PREHEAT oven to 375° F.

    FOR CRUST:
    COMBINE
    flour and powdered sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture is crumbly. Press evenly onto the bottom of ungreased 13 x 9-inch baking pan.

    BAKE for 10 to 12 minutes or until set.

    FOR TOPPING:
    SPRINKLE
    morsels and 1 cup chopped nuts over hot crust.

    BEAT egg whites in medium mixer bowl until frothy. Gradually add brown sugar. Beat until stiff peaks form. Carefully spread meringue over morsels and nuts. Sprinkle with remaining nuts.

    BAKE For 15 to 20 minutes or until golden brown. Serve warm or cool completely.

      These bars are simply amazing. The light meringue topping just floats away the second you put it in your mouth, and the shortbread bottom is to die for...I wondered if the recipe had called for too much butter in the crust, but this is not the case. The two sticks of butter makes the bottom so rich and decadent! Instead of nuts, I used crispy candy coated chocolates, which also made the bars colorful and appealing to the eye. The meringue, however, really flaked a lot while cutting the bars, which may be remedied by extra cooking. The bars have a nice consistency, and are very thick...one little bar is all you would need for a serving...plus a scoop of ice cream. I will be making these bars again and again, with a different special ingredient each time!
