These succulent Cranberry Pork Chops are easy to make and tasty too! Great for dinner and entertaining.
Ingredients:
4 (about 1 1/2 pounds total) 3/4-inch-thick boneless pork loin chops
2 teaspoons vegetable oil
1 medium onion, thickly sliced
3/4 cup Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice
2 to 3 tablespoons granulated sugar
3/4 cup fresh cranberries
1 large clove garlic, finely chopped
3/4 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme, crushed
1/4 cup coarsely chopped walnuts, toasted (optional)
Directions:
SEASON pork with salt and ground black pepper, if desired. Heat oil in large, nonstick skillet over medium-high heat. Add pork and onion; cook pork quickly on both sides until browned. Remove pork from skillet.
ADD Juicy Juice and sugar to skillet; stir until sugar is dissolved. Stir in cranberries, garlic and thyme; cook, stirring occasionally, for 2 minutes. Return pork to skillet; reduce heat to low. Cover; cook for 5 minutes or until pork is no longer pink in center. Sprinkle with nuts before serving.
NOTE: No fresh cranberries on hand? You can substitute with sweetened dried cranberries. Simply replace the fresh cranberries with 1/2 cup sweetened dried cranberries and reduce the granulated sugar to 1 tablespoon.

Topped with crispy pancetta and melted mozzarella cheese, and stuffed with potatoes, pesto, and sour cream this recipe delivers true Italian taste.
Ingredients:
2 (8 ounces each) russet potatoes, washed and pricked with fork
1/3 cup BUITONI Refrigerated All Natural Pesto with Basil
1/4 cup sour cream
1/4 cup (1 ounce) shredded mozzarella cheese
3 ounces pancetta, cooked and crumbled
Directions:
PREHEAT oven to 400° F.
BAKE potatoes for 50 to 60 minutes or until soft. Cool for 10 minutes; cut in half lengthwise. Scoop out insides with a spoon being careful not to break the skins.
COMBINE potato pulp, pesto and sour cream in medium bowl. Whip until blended. Spoon mixture back into potato skins. Top with cheese and pancetta.
BAKE for an additional 15 minutes or until cheese has melted and potatoes are hot.

Tasty enough for any occasion, these butterscotch haystacks are mounded with a mixture of peanut butter, butterscotch morsels, marshmallows and chow mein noodles. To enjoy in a snap, make them the microwave way.
Ingredients:
1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels
3/4 cup creamy peanut butter
1 can (8.5 oz.) or 2 cans (5 oz. each) chow mein noodles
3 1/2 cups miniature marshmallows
Directions:
LINE trays with wax paper.
MICROWAVE morsels in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in peanut butter until well blended. Add chow mein noodles and marshmallows; toss until all ingredients are coated. Drop by rounded tablespoon onto prepared trays. Refrigerate until ready to serve.
DOUBLE BOILER METHOD:
PLACE morsels in top of double boiler over hot (not boiling) water. Do not cover. When most of the morsels are shiny, stir just until melted. (Prevent water from coming in contact with morsels.) Remove from heat; stir in peanut butter. Transfer to large bowl. Add chow mein noodles and marshmallows; proceed as above.

Hi, we tried this recipe, it is almost like my old recipe. I had not made them in years. We would use the shoestring potatoes you buy in the can. They were real crispy and we added Nestles semi sweet morsels and minature marshmellows. Taste almost like fudge with nuts, just easier. I did like this recipe also. A little too salty though .

One little note, though: Unless you are into "mini-stacks," I don't think most folks are going to get anywhere near 72 from a single recipe. To make them what I consider a reasonable/good size, I usually end up with about 30-36 from one recipe of these.

Try swapping the chow mein noodles out for Fiber One* cereal(not the flakes, the sticks) and using reduced-fat peanut butter. No one will notice or miss the change. Reducing the amount of marshmallows to 1 1/2 cups and tossing in 1/2 cup of white chocolate chips & 1/2 cup dry roasted peanuts is also good. These are excellent!
