Have a cheerful start to your morning with some sugar and spice and everything nice. The distinct flavor of eggnog paired with the creamy taste of Carnation, takes traditional French toast to a new level.
Ingredients:
2 large eggs
1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
2 tablespoons granulated sugar
2 teaspoons rum extract*
1/2 teaspoon ground cinnamon

Nonstick cooking spray
Powdered sugar
Maple syrup (optional)
Directions:
BEAT eggs, evaporated milk, sugar, rum extract, cinnamon and nutmeg in shallow dish until well blended. Place 4 slices bread into egg mixture turning over to evenly moisten both sides.

We make a lot of french toast in our house since it is so cheap and easy. This recipe really brought plain old french toast into a new realm! We enjoyed it soooo much more with the evap milk.

Try this versatile Hash Brown Casserole as a main or side dish for breakfast or brunch. This recipe calls for bacon, but it is a great recipe for leftover ham. If your family likes spice, try adding in some pepper jack cheese or crushed red pepper flakes.
Ingredients:
2 cups (8 oz.) shredded cheddar cheese
3 cartons (4 oz. each) cholesterol-free egg product or 6 large eggs, well beaten
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
1 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1 pkg. (30 oz.) frozen shredded hash brown potatoes
1 medium onion, chopped
1 small green bell pepper, chopped
10 slices turkey bacon, cooked and chopped, or 1 cup diced ham
Directions:
PREHEAT oven to 350° F. Grease 13 x 9-inch baking dish.
COMBINE cheese, egg product, evaporated milk, salt and black pepper in large bowl. Add potatoes, onion, bell pepper and bacon, mix well. Pour mixture into prepared baking dish.
BAKE for 60 to 65 minutes or until set.

This was perfect for our Easter brunch. Super easy for me to make and everyone loved it. Next time, I might try it with broccoli instead and omit the green pepper for wider appeal.

I've been making this casserole for years now. It's the only dish I'm allowed to bring for company events because they love it so much. It's easy and delicious. I've used diced ham and smoked sausage in the recipe before and they both give it a unique flavor.

Super good to feed a crowd!
Candus Lunderberg from

I made this as part of my son's high school graduation party brunch. We fed 150 people and served this casserole along with fresh fruit and sweet breads. We made only one change to the recipe which was to add chopped ham instead of bacon. It was a huge hit. I ended up sending the recipe in more than a few thank you cards!!

Feeds a crowd for pennies
Adrienne Guarro from
York, PA
We hosted 8 teenage boys in our home for the weekend, and I needed a breakfast option that would be quick, easy, and affordable. I doubled this recipe, and replaced the bacon with cooked and crumbled turkey sausage. Everyone raved about how good it was, and kept going back for 2nds, and 3rds. To save time, I even made the casserole the night before and stored it covered in the fridge till the morning. Then, I added an extra 10 minutes to the cooking time. I will make this recipe again and again. Thank you for sharing it.

This recipe is great, as my husband loves a hearty breakfast, but so many things contain bacon - and he just doesn't like the fatty (delicious - in my opinion) food. However, turkey bacon is a favorite and it brings great flavor to this recipe. Thanks once again!

Excellent Hash Brown Casserole
Kathy Cole from

My family really enjoyed this casserole. It was easy to make and very good. I did add 1 extra cup of cheese and diced ham, and 1 extra egg, that was because my family and I like alot of cheese and meat in our casseroles, other than the additions mentioned, I followed the recipe. Best casserole I ever made, will definitely make again.

Tried this for supper t'nite. Pretty good! Just plain food. I made it pizza~like w/ mini pepperoni, bell pep and onion and 1 tsp of cajun seasoning blend. Layering flavors might help::
Maybe if you toss the thawed potatoes in seasoning & a little melted butter::(garlic, basil, thyme etc.)

BEST BREAKFAST/ LUNCH/SUPPER /BRUNCH
ann novick from
Nw Hampshire
As empty nesters( only 2 adults @ home to feed now)the number of servings as originally submitted was just too much for us.
I cut the recipe way down ( made only one fourth of it). We both really loved it.
I make it ahead of time, cool, cover & keep it chilled. At serving time either one of us can slice a portion or two off & microwave reheat it. Grab a beverage; a piece of fruit and a few cookies for a perfect "finally home after a day full of busy-ness: shopping, misc appointments or volunteering
When the (six) grands visit. the FULL RECIPE will be made & enjoyed by all; while still having plenty of time for visiting & having fun.
This is the recipe I've been looking for all my married life.

Rather Bland
Cathy Horton from

I followed the recipe with the exception of the 2 changes listed below. I used 1 lb of bulk breakfast sausage instead of ham or bacon. I also used 7 extra large eggs. All in all, we found this to be rather bland. It was ok but I don't think I'll be making it again.

easy breakfast

I made this for our cousins who spent the night last weekend and it was perfect and easy to make when you have guests in the house. I used canadian bacon because we do not care for turkey bacon, and canadian bacon is very low fat, since we are trying to watch our weight. Easy clean up too compared to a big greasy breakfast!!

My husband just told me it was his turn to bring the office breakfast, so I thought I would try this 5 star rated recipe. I added green chilies in hopes of making it tastier, and baked a small portion for myself to try. This tastes like nothing, very bland. I am sending salsa with it to the office, but will not make it again.
