Try this recipe for a Solstice Sunrise Spritzer for a refreshing start to a meal. Experiment with other juice varieties for special occasions.
Ingredients:
1 cup NESTLÉ PURE LIFE Purified Water (or fruit flavored, if desired)
2 tablespoons fresh lime juice
16 fresh mint leaves
1 1/2 cups Orange Tangerine Flavor NESTLÉ® JUICY JUICE® All Natural 100% Juice
1 cup diet tonic water
Ice cubes (about 2 cups total)
Directions:
COMBINE water, lime juice and mint leaves in 2-cup measuring cup or bowl. Using the back of a spoon or fork, press down firmly to crush the mint leaves, allowing the flavor to be released.
POUR mint mixture into small pitcher; stir in Juicy Juice. Let steep for at least 15 minutes or cover with plastic wrap and refrigerate for up to 8 hours. (After 8 hours, remove mint and add fresh mint just before serving.) Add tonic water; stir gently. Pour into 4 tall glasses filled with ice. Serve immediately.

No Mess Summer Fish Packets with Pesto take advantage of seasonal produce combined with tasty fish fillets. With little prep and limited post-party clean-up, this healthy dish can be baked or grilled – perfect for summer entertaining and is easy-to-make.
Ingredients:
Heavy-duty foil
Nonstick cooking spray
Grated peel and juice from 1 lemon
1 container (7 ounces) BUITONI Refrigerated All Natural Pesto with Basil or All Natural Reduced Fat Pesto with Basil
1 bunch thin asparagus spears, trimmed into 2-inch pieces (about 2 1/2 cups total)
1 large yellow squash or zucchini, cut in half lengthwise, then sliced horizontally into 1/4-inch half-moons (about 1 1/2 cups total)
5 (4 to 5 ounces each) about 1-inch-thick white fish fillets (such as wild halibut, red snapper, orange roughy or talapia)
Course salt and ground black pepper
1 basket cherry tomatoes, halved (about 1 1/4 cups total)
2 tablespoons sliced green onion
Directions:
PREHEAT oven to 450° F.
ARRANGE five 12 x 13-inch pieces of foil on work surface; coat lightly with nonstick cooking spray. Stir lemon peel into pesto. Divide asparagus and squash evenly down center of each foil sheet; spoon 1 tablespoon pesto mixture over vegetables. Place one fish fillet over pesto vegetables; sprinkle fish with salt and pepper. Spread each fish fillet with 1 tablespoon pesto mixture.
TOP each fish fillet evenly with tomato halves and green onion. Sprinkle with lemon juice. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside. Place on 15 x 10-inch jelly-roll pan or rimmed baking sheet.
BAKE for 20 minutes or until fish is just opaque in center and vegetables are crisp-tender. Carefully open packets, allowing steam to escape away from you and let cool briefly. Using a spatula, gently push the fish and vegetables onto plate.
Cook's Tip: Fish Packets are also great on the grill! Preheat grill to medium. Place packets on grill; cover and cook over indirect heat for 20 minutes or until fish is opaque in center and vegetables are crisp tender. Remove from grill and open carefully.

Savory and delicious, Cheese Garlic Bread is easy to make and adds a touch of class to any meal. Garnish with additional fresh herbs for extra flavor.
Ingredients:
1 loaf (1 pound) French, sourdough or Italian bread
6 tablespoons butter, softened
2 to 3 cloves garlic, pressed through garlic press
1/4 to 1/2 cup BUITONI Refrigerated Freshly Shredded Parmesan Cheese
1 tablespoon finely chopped fresh parsley
Directions:
PREHEAT broiler. Position oven rack 6 inches from heat source.
COMBINE butter, garlic, cheese and parsley with a fork in a small bowl until thoroughly blended.
SLICE bread in half lengthwise and place on baking sheet. Spread half of butter mixture on each half of the bread. Cut 12 slices into each half about 2/3 of the way through.
PLACE bread in oven under broiler for 2 to 4 minutes or until beginning to turn golden brown at edges and on top.

These cute Mini Lemon Lime Tartlets give the fresh taste of spring and are the perfect way to celebrate any occasion.
Ingredients:
1 pkg. (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Sugar Cookie Bar Dough
1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
1 pkg. (8 oz.) 1/3 less fat cream cheese (Neufchâtel) or regular cream cheese, at room temperature
2 cups thawed fat free, reduced fat or regular frozen whipped topping
1/4 cup lemon juice
2 teaspoons grated lemon peel
1/4 cup lime juice
2 teaspoons grated lime peel
Additional lemon and lime quarter slices, peel curls or grated peel (optional)
Directions:
PREHEAT oven to 325º F. Paper-line 24 muffin cups.
CUT dough along pre-scored lines; place one piece of cookie dough in each muffin cup.
BAKE for 13 to 15 minutes or until golden brown. Cookies will be puffy. Cool completely in pan on wire rack.
BEAT sweetened condensed milk and cream cheese in large mixer bowl until smooth. Gently fold in whipped topping. Divide mixture into two medium bowls. Stir lemon juice and lemon peel into one bowl and lime juice and lime peel into other bowl.
POUR about 3 tablespoons lemon cream cheese mixture, followed by the lime cream cheese mixture, over 24 cookie cups. Refrigerate for 2 hours or overnight. Decorate with lemon and lime quarter slices, curls or peel, if desired.
TIPS:
• Using low and reduced fat cream cheese and whipped topping helps to make these treats lower in fat.
• Love lemon but not crazy about lime? Simply double the lemon juice and grated lemon peel in the recipe and leave out the lime, and make 24 lemon tartlets. Tartlets may be frozen in an airtight container for up to 2 weeks. Allow to thaw at room
temperature for 30 minutes before serving.

Very easy to make and very tasty. Even my son liked the flavor. Want to try it with strawberries. To dress them up a little without using lemon/lime slices I started with a dollop of whipped topping and added sprinkles. Then - had my husband bring home yellow bunny peeps. Put them on top along with sprinkles for a festive Easter look.
