Ingredients:

  • 2 cups honeydew melon balls or cubes
  • 2 cups cantaloupe melon balls or cubes
  • 2 cups watermelon balls or cubes
  • 1/3 cup finely chopped fresh mint (optional)
  • 1 can (14 ounces) NESTLÉ LA LECHERA FAT FREE Sweetened Condensed Milk
  • 1/2 cup fresh lime juice
  • 2 tablespoons lowfat milk
  • 2 tablespoons grated lime peel

Directions:

COMBINE honeydew, cantaloupe, watermelon and mint in large bowl; refrigerate for 1 hour or until chilled.

MIX sweetened condensed milk, lime juice, milk and lime peel in small bowl until combined. Serve melon salad in individual dessert bowls topped with prepared sauce.

Ingredients:

  • CHICKEN
  • 6 boneless, skinless chicken breast halves
  • Juice of 2 limes
  • Salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • SPICY QUINOA SAUCE
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 to 2 tablespoons hot yellow pepper paste or puree (aji amarillo) or habanero hot sauce to taste
  • 1 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup cooked quinoa
  • 1/4 cup unsalted dry roasted peanuts
  • 1 pkg. (3.5 oz.) goat cheese or 2/3 cup crumbled feta cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions:

FOR CHICKEN:
ARRANGE chicken in 13 x 9-inch baking dish. Drizzle with lime juice. Season with salt and black pepper. Drizzle with tablespoon of olive oil. Marinate in refrigerator for 2 hours.

GRILL or broil chicken for about 6 minutes on each side or until no longer pink in center.

FOR SPICY QUINOA SAUCE:
HEAT 2 tablespoons olive oil in large skillet over medium heat. Add onion, garlic and pepper paste. Cook, stirring occasionally, for 5 minutes or until soft. Remove from heat; let stand for 5 minutes.

PLACE milk, quinoa, peanuts and onion mixture in blender or food processor; cover. Blend until smooth. Add the cheese; pulse a few times to blend. Return sauce to skillet. Cook over low heat, stirring constantly, for 10 minutes or until creamy and heated through. Season with salt and pepper. (Makes about 2 cups)

TO SERVE, arrange chicken breasts on platter. Pour sauce over chicken.

TIPS:
• If sauce is too thick for your preference, thin with remaining evaporated milk.
• The sauce can be made a day ahead, covered and refrigerated until ready to use. To reheat, dilute with more evaporated milk as needed.

Ingredients:

  • Nonstick cooking spray
  • 8 large egg whites
  • 4 large eggs
  • 1 1/3 cups (3.2-oz. envelope) dry NESTLÉ® CARNATION® Instant Nonfat Dry Milk
  • 2 cups (8 oz.) shredded cheddar cheese
  • 2 cups (about 6 oz.) sliced fresh mushrooms
  • 1/2 cup finely chopped red bell pepper
  • 2 medium sliced green onions
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions:

PREHEAT oven to 400° F. Spray 10-inch oven-proof skillet with nonstick cooking spray.

COMBINE egg whites, eggs and dry milk in medium bowl; mix thoroughly. Stir in cheese, mushrooms, bell pepper, green onions, salt and black pepper. Pour mixture in prepared skillet.

BAKE for 30 to 35 minutes or until set in center. Cool on wire rack for 5 minutes before cutting into wedges.

FOR A LOWER-FAT FRITTATA
Substitute two 8-ounce cartons of egg substitute and 2 cups reduced-fat cheddar cheese for egg whites, eggs and cheddar cheese.

  • 1 prepared 9-inch (6 oz.) shortbread crumb crust
  • 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
  • 1/2 cup (about 3 medium lemons) fresh lemon juice
  • 1 teaspoon grated lemon peel
  • 2 cups frozen whipped topping, thawed
  • Grated lemon peel or lemon slices (optional)

Directions:

BEAT sweetened condensed milk, lemon juice and peel in small mixer bowl until combined. Fold in whipped topping; pour into crust. Cover; refrigerate for 2 hours or until set. Garnish with lemon peel.

NOTE: For a lower calorie and fat version of this recipe, a 6-oz. prepared reduced-fat graham cracker crust and fat-free frozen whipped topping can be substituted for the shortbread crumb crust and frozen whipped topping.
