This sparkling Sangria fruit spritzer is great for entertaining or adding fresh taste to everyday dinners. Try the frozen grape and mint leaf ice cubes to add an extra splash of color and flavor.
Ingredients:
1 orange, washed, halved and cut into thin slices (remove any seeds)
2/3 cup red and/or green grapes, rinsed and cut in half
1/3 cup loosely packed fresh mint leaves or sprigs, rinsed
Purified water
3 cups Apple NESTLÉ JUICY JUICE All Natural 100% Juice, chilled
4 to 5 cups calorie-free seltzer water, chilled
Directions:
PLACE orange slices on baking sheet and freeze for 30 minutes.
DIVIDE grape halves and mint leaves or sprigs between two ice cube trays. Fill each tray with purified water and freeze until solid.
POUR Juicy Juice into pitcher; add frozen orange slices, prepared ice cubes and seltzer water. Serve immediately.
NOTE: Omit ice cubes for children under age 4 due to choking risk. Also, try substituting White Grape NESTLÉ JUICY JUICE All Natural 100% Juice.

The kids and I had a great time preparing the Sangria. We are not mint fans so for both recipes we did leave it out. We followed the first reciped to a T except for the mint. The second time we decided to play around and mix and match the fruit. Bot of the recipes were great and we will try them again.

Luscious mango nectar combined with pineapple chunks and diced fresh mango make a sweet but zesty marinade for halibut. Mixed with bell pepper, cilantro and lime peel this marinade renders the fish flavorful and moist.
Ingredients:
SALSA
1 cup diced pineapple
3/4 cup diced red bell pepper
1/2 cup diced red onion
1/2 cup diced mango
1/2 cup mango nectar
1/4 cup chopped fresh cilantro
1/4 teaspoon grated lime peel
1/4 teaspoon crushed red pepper
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon
HALIBUT
4 (4 ounces each) skinless halibut fillets
1 tablespoon olive oil
1 lime, juiced
1 tablespoon MAGGI Granulated Chicken Flavor Bouillon
Directions:
FOR SALSA:
COMBINE pineapple, bell pepper, onion, mango, nectar, cilantro, lime peel, crushed red pepper, cumin and cinnamon in medium bowl; cover. Marinate in refrigerator for 1 hour. Bring to room temperature.
FOR HALIBUT:
PLACE halibut fillets in a large freezer bag; add oil, lime juice and bouillon. Seal; gently shake bag to cover fillets in marinade. Place in refrigerator for 30 minutes.
PREHEAT grill or broiler.
GRILL or broil halibut for 3 to 5 minutes on each side or until halibut flakes easily when tested with a fork. Serve salsa over halibut.

These Herb Roast Potatoes are easy-to-make and so very delicious. Use any combination of finely chopped fresh herbs such as rosemary, thyme, garlic or chives to create a tasty side dish.
Ingredients:
1 pound small red skinned potatoes, unpeeled
1 tablespoon olive or canola oil
1/4 teaspoon coarse salt
1/8 teaspoon freshly ground black pepper
2 teaspoons finely chopped fresh herbs (such as rosemary, thyme, garlic, chives or a combination)
Directions:
PREHEAT oven to 425° F.
CUT potatoes in half or quarters so that all are fairly uniform in size.
PLACE on rimmed baking sheet. Drizzle potatoes with oil. Sprinkle with salt, pepper and herbs of choice; gently mix with hands until potatoes are uniformly covered. Spread into a single layer, flat-side-down.
BAKE for about 30 to 40 minutes or until browned to your liking and tender when tested with a fork.
TOSS gently with spatula. Transfer to serving platter and serve immediately.

Really Yummy Dark Chocolate Fudge with Pistachios is decadent and delicious! This simple to follow recipe ensures success every time. Nuts and miniature marshmallows add fabulous flavor and texture dimensions. Experiment with other nuts like toasted pecans or walnuts to create more variations.
Ingredients:
1 1/2 cups granulated sugar
2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 2/3 cups (10-oz. pkg.) NESTLÉ® TOLL HOUSE® Dark Chocolate Morsels
1/2 cup plus 2 tablespoons coarsely chopped shelled pistachios or toasted pecans, divided
1 teaspoon vanilla extract
Directions:
LINE 8-inch-square baking pan with foil.
COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
STIR in marshmallows, morsels, 1/2 cup nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan. Sprinkle remaining 2 tablespoons of nuts over top of fudge; carefully press nuts into the fudge. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.

This is my first time making fudge with dark chocolate and I have to say for me it was the best fudge! I didn't have pistachios but I had pecans on hand and they worked great. I am sure the pistachios would be great too!
I almost goofed and didn't get enough of the dark chocolate, just had it in my mind that one bar would give me the 12 oz needed but thankfully I checked the bars at the store (they are 4oz bars) and got the right amount!
Definitely will make again!

Finally a fudge I can make. I've never been able to make the "traditional" fudge like my Mother made--would never set up or would be too grainy. This was very easy, set up really well.
