Grilled Swordfish Kabobs and Couscous Salad

Ingredients:

  • 1/2 cup loosely packed fresh basil sprigs
  • 1 bottle (750 ml) limoncello liqueur, chilled, divided
  • 1 bottle (16.9 fluid ounces) PERRIER Sparkling Natural Mineral Water
  • Crushed ice cubes
  • 6 basil sprigs for serving

Directions:

MUDDLE or smash 1/2 cup basil with 1/4 cup limoncello with a wooden spoon in a large pitcher. Add remaining limoncello and sparkling water.

FILL glasses half full with ice. Top with limoncello mixture, holding back bruised basil; garnish with basil sprig.

    Ingredients:

    • AVOCADO BUTTER
    • 1/2 avocado, peeled and mashed until smooth
    • 1 to 2 tablespoons butter
    • 1 tablespoon fresh lemon juice
    • 1/2 teaspoon MAGGI Seasoning Sauce
    • 1/8 teaspoon garlic powder
    • 1/4 cup thinly sliced green onions, tops included
    • SWORDFISH KABOBS
    • 1/4 cup MAGGI TASTE OF ASIA Cooking Soy Sauce
    • 1/4 cup canola or olive oil
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon grated lemon peel
    • 1 clove garlic, crushed
    • 2 teaspoons Dijon mustard
    • 4 (about 1 1/2 pounds total) small swordfish or tuna steaks, cut into 1 1/2-inch cubes
    • 4 skewers

    Directions:

    FOR AVOCADO BUTTER:
    COMBINE
    avocado, butter, lemon juice, seasoning sauce and garlic powder in a small bowl; fold in sliced green onions. Cover and refrigerate until ready to serve.

    FOR SWORDFISH KABOBS:
    COMBINE
    soy sauce, oil, lemon juice, lemon peel, garlic and mustard in a gallon-size resealable plastic bag; blend mixture with fingers.

    ADD fish cubes to bag. Seal bag and place in the refrigerator to marinate for 1 to 3 hours.

    THREAD fish onto skewers. Discard marinade.

    PREHEAT grill or broiler.

    GRILL or broil fish, turning over halfway through cooktime, for 4 minutes or until fish flakes easily when tested with a fork. Serve with Avocado Butter.

    NOTE: If you are using wooden skewers, soak in water for 30 minutes before threading.

      • 1 cup water
      • 1 teaspoon MAGGI Granulated Chicken Flavor Bouillon
      • 3/4 cup whole-wheat couscous
      • 2 tablespoons fresh lemon juice
      • 1 tablespoon extra virgin olive oil
      • 1/2 cup halved cherry or pear tomatoes
      • 1/4 cup sliced and quartered cucumber
      • 1/4 cup diced green bell pepper
      • 1 tablespoon chopped fresh parsley and/or sliced green onion
      • 1/4 teaspoon ground black pepper

      Directions:

      COMBINE water and bouillon in small saucepan. Bring to a boil; remove from heat. Stir in couscous. Cover; let stand for 5 minutes. Fluff with fork.

      TRANSFER couscous to medium bowl; stir in lemon juice and oil. Add tomatoes, cucumber, bell pepper, parsley and black pepper; toss lightly. Serve immediately or refrigerate.

      • 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
      • 1/2 cup (about 3 medium limes) fresh lime juice
      • 1 teaspoon grated lime peel
      • 2 cups frozen whipped topping, thawed
      • 8 thin lime slices (optional)

      Directions:

      BEAT sweetened condensed milk and lime juice in small mixer bowl until combined; stir in lime peel. Pour into crust; spread with whipped topping. Refrigerate for 2 hours or until set. Garnish with lime slices.

        This is a great treat for the summer. The only thing I made different was I added orange peel and juice to the recipe along with the limes (1/4 cup of each juice), so it was an orange-key lime pie and it was really delicious. I also substituted whipped cream w/ lime and orange peel and topped the pie with this cream rather than a cool whip topping.

        First off, I decided to use key limes instead of limes and it totally made the pie more flavorful than I think a regular lime would. Secondly, after I mixed the sweetened condensed milk with the lime juice, it seemed that the consistency was too flat so I folded in the whip cream (8 oz tub). This gave it a nice fluffy consistency. Thirdly, this pie was delicious!
