Hash Brown Bake with Chocolate-Filled Monkey Bread

This yummy hash brown bake featuring ham, melted Swiss cheese, and spinach makes a great brunch entrée everyone will love! Ingredients:

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 cinnamon sticks
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 1 1/2 teaspoons vanilla extract
  • 6 cups assorted fresh fruit (apples, bananas, grapes, mangoes, papayas, peaches, and/or strawberries)
  • Ground cinnamon, (optional)

Directions:

COMBINE sugar, cornstarch and cinnamon sticks in medium saucepan. Gradually stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens. Remove from heat and remove cinnamon sticks; stir in vanilla extract. Refrigerate for 2 hours or until well chilled. Makes about 1 1/2 cups.

ARRANGE fruit in dessert dishes. Top with sauce. Sprinkle with cinnamon, if desired.

TIP: Refrigerate leftover sauce in covered container for up to 3 to 4 days.

    My family didn't care for this one. The thickness of the sauce and the heaviness of the cinnamon took away from the flavor of the fresh fruit, rather than add to it. I would suggest using less corn starch and perhaps a little nutmeg with the cinnamon.

    I read a few rating comments prior to making this sauce, so I prepared to make adjustments for thickness and richness. I made 2 versions- an original recipe, and one with less cornstarch and fat free evaporated milk. In agreement with other tasters, the original was a bit much for fresh fruit, but it was Great served warm with warm spiced peaches and pears.We topped it off with nutmeg rather than cinnamon. The lighter version was much better on fresh sliced fruit, but I think with strawberries and grapes, we would have preferred to omit the cinnamon sticks

Ingredients:

  • 1 bag (16 oz.) or 4 1/2 cups frozen, shredded hash brown potatoes
  • 2 cups (about 8 oz.) cooked ham, cut into 1/2-inch pieces
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 1 can (10 oz.) condensed reduced-sodium cream of mushroom soup
  • 1 tablespoon Dijon or yellow mustard
  • 1/2 to 1 teaspoon ground black pepper
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed of moisture
  • 1 cup (4 oz.) shredded Swiss cheese

Directions:

PREHEAT oven to 400º F. Grease 2 1/2- to 3-quart casserole dish.

COMBINE potatoes, ham, evaporated milk, soup, mustard and pepper in large bowl. Pour half of potato mixture into prepared baking dish. Sprinkle with spinach and top top with remaining potato mixture. Sprinkle with cheese.

BAKE for 40 to 45 minutes or until heated through and lightly browned. Cool for 10 minutes before serving.

TIP:
• This versatile dish is great with many types of meats you may already have in your fridge. Try using chopped turkey or chicken instead of ham.

Ingredients:

  • 18 frozen white dinner rolls, thawed
  • 1 1/2 cups (9 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup packed light brown sugar
  • 1/2 cup butterscotch sauce (optional)
  • 1/4 cup NESTLÉ NESQUIK Chocolate Flavor Syrup, (optional)

Directions:

GREASE 12-inch Bundt pan.

CUT each roll in half. Press each half into 3-inch circle. Place 10 or 11 morsels in center of dough circle, shaping dough into a ball around morsels. Pinch dough to seal. Repeat with remaining dough and morsels. Dip each in melted butter and roll in sugar. Arrange dough balls in prepared pan; seam sides up. Cover; let rise in warm place for 40 minutes or until doubled in size.

PREHEAT oven to 350° F.

BAKE for 30 minutes or until golden brown. Cool in pan on wire rack for 20 minutes. Loosen sides and invert onto serving platter. Drizzle with butterscotch sauce and Nesquik. Serve warm.

    I love this recipe, I use the instant butterscotch pudding and shake it dry over the buttered rolls, simply delicious. also can be made the night before, place the rolls in pan alternating the layer of rolls with the butterscotch, I also use the sugar free, cuts the calories a little bit for this yummy recipe.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup (2 sticks) butter, softened
  • 1 pkg. (8 oz.) cream cheese, at room temperature
  • 2 large eggs
  • 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon peel
  • 1 teaspoon yellow food coloring (optional)
  • 1 cup sour cream

Directions:

PREHEAT oven to 350° F.

COMBINE flour and powdered sugar in medium bowl. Cut in butter with pastry blender or two knives until crumbly. Press onto bottom and 1-inch up sides of ungreased 13 x 9-inch baking pan.

BAKE for 25 minutes.

PLACE cream cheese, eggs, evaporated milk, granulated sugar, flour, lemon juice, lemon peel and food coloring in blender container; cover. Blend until smooth. Pour into partially baked crust.

BAKE for additional 15 minutes or until set. Cool in pan on wire rack. Spread sour cream over top; refrigerate. Cut into bars. Garnish as desired.

    by the recipe, was very blah even doubling the lemon juice. The crust should have some brown sugar in it....too bland. And I did not love the sour cream on top. I mixed lemon instant pudding in cool whip and layered that on top and then I really liked it.

Oddly enough, the amount of yellow food coloring prescribed proved too much for the mixture -- the cheese cake part turned orange, not yellow. For best results, top the cake with sour cream and refrigerate it for three hours.
