Hot Spinach Dip and Parmesan Baked Chicken

Easy and delicious! This combination is great for entertaining or family weeknight meals. The hot spinach dip makes a fun-to-prepare starter and everyone will love the fudge finale.

Ingredients:

  • 1 package (9 ounces) STOUFFER'S Spinach Souffle, prepared according to package directions
  • 1 package (3 ounces) cream cheese, softened
  • 1/2 cup plus 1 tablespoon (about 2 1/2 ounces) grated Parmesan cheese, divided
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped green onion
  • Tortilla chips
  • TOPPINGS: diced tomatoes, chopped green onions and shredded Monterey Jack cheese

Directions:

PREHEAT oven to 350° F.

COMBINE spinach soufflé, cream cheese, ½ cup Parmesan cheese, mayonnaise and 2 tablespoons green onion in a medium bowl. Transfer to a small baking dish; sprinkle with 1 tablespoon Parmesan cheese. Place baking dish in center of baking sheet or ovenproof platter.

ARRANGE tortilla chips around dip. Sprinkle chips with tomatoes, chopped green onions and Monterey Jack cheese.

BAKE for 20 to 25 minutes or until dip is hot and Monterey Jack cheese is melted.

    I've made this twice now and have gotten rave reviews. I substitute sour cream for mayo and use 4oz of cream cheese. I always add chopped artichoke hearts and a clove of minced garlic. The second time I added bacon bits and used italian marinated artichoke hearts. There are so many variations you can make, and it tastes great...this will definitely be served at my Super Bowl party!

    I made this to use up the spinach souffle in the freezer, which my kids wouldn't touch. I threw it together at the last minute and everyone LOVED it. It was one of the few times there was nothing left to save and the bowl was licked clean. Now everyone has asked for it again at the New Year's Eve party! I didn't have green onion either, so i sauteed some yellow onion, chopped very fine, with a dab of diced garlic. I realized at the last minute that this *wasn't* a spinach-artichoke dip, so we added artichoke at the last minute and it was delicious.

    this is a great dip recipe and so easy to make! i don't use the mayo, instead i add a little extra cream cheese. I also use the parmesan, but add extra shredded cheese (whatever i have on hand) to the dip. It's always a big hit and nobody ever believes that it's so easy to make! :)

    My husband thinks this is the best recipe ever invented! He raves every time I prepare it for him. And I usually prepare it once or twice a week! He makes it his one course meal! I did revise it a little to make it dip better. I add a half cup of alfredo sauce to it. I also layered the cheese in the middle and on top and heat it with it. I use 8 ounces of pepperjack cheese with hot peppers.The chips I heat in the microwave and serve beside it.(This recipe can be altered by adding things such as cooked sausage, mushrooms, etc. It's endless!)

    I printed this recipe March 12, 2004 + have already made it TWICE w/ instructions to make it again!! Our teen sons love it, even the one who says he "doesn't like spinach." They decided I should take this to future potlucks, or when we have to bring a dish to share. I've modified the recipe slighly by using shredded jalapeno jack cheese on top, + for those who like spicier food this worked out great. A word of caution---I made ithis as an appetizer before dinner, but our family of 4 was then too full to eat the dinner that was cooking!

    I love spinach, especially in a dip. I was so excited to make it for dinner with our quesadilla's. Easy to make however I didn't like the flavor. I think maybe it was the mayo. I wonder how it would be with sour cream. I couldn't find the Stouffers in my store and used another brand- maybe that was why too but I don't think so. I will not make this again or may try and use sour cream instead of mayo.

    Ingredients:

    • 1/3 cup seasoned fine dry bread crumbs
    • 1/4 cup BUITONI Refrigerated Freshly Shredded Parmesan Cheese (5 oz.)
    • 4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves
    • 2 large eggs, beaten
    • 2 teaspoons extra virgin olive oil
    • 1/2 cup (2 ounces) shredded reduced-fat mozzarella cheese
    • 1 package BUITONI Refrigerated Linguine (9 oz.)
    • 2 containers BUITONI Refrigerated Marinara Sauce (15 oz.)
    • Fresh basil sprigs (optional)

    Directions:

    PREHEAT oven to 375° F. Lightly grease 8-inch-square (2-quart) baking dish.

    COMBINE bread crumbs and Parmesan cheese in shallow dish. Dip chicken in eggs, then cover with bread crumb mixture. Arrange chicken in prepared baking dish. Drizzle with oil.

    BAKE for 25 to 30 minutes or until chicken is tender and no longer pink in center. Sprinkle with mozzarella cheese. Bake for an additional 2 minutes or until cheese is melted.

    PREPARE pasta according to package directions; warm sauce according to package directions. Toss pasta with sauce; divide among plates. Top with chicken. Garnish with basil.

      I thought this was sooooo good! I was very impressed with the taste. Being a mother of 18 month old twins it is hard finding something so fast and so good. I loved it the first time I made it and I even screwed up. It says to add grated parmesan. well, I added the shredded parmesan as well to the breading and it made the chicken crunchier and the parmesan flavor come out 10 time more. I also thought the marinara sauce was a little on the weak side and I am not much for marinara. So, what I did was made spaghetti sauce and added a few different spices. Then I just made regular spaghetti noodles and had the chicken top that. I loved this meal! It is great and fast A+ on my side.

      I made this today and found it very flavorful and easy to make- only made the chicken though as i had leftover rice.       I am a college student who has never cooked chicken in my life. I tried this recipe out one night when I cooked dinner for my boyfriend.     Ingredients:

    • 2 cups (8 oz.) shredded cheddar cheese
    • 3 cartons (4 oz. each) cholesterol-free egg product or 6 large eggs, well beaten
    • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
    • 1 teaspoon salt (optional)
    • 1/2 teaspoon ground black pepper
    • 1 pkg. (30 oz.) frozen shredded hash brown potatoes
    • 1 medium onion, chopped
    • 1 small green bell pepper, chopped
    • 10 slices turkey bacon, cooked and chopped, or 1 cup diced ham

    Directions:

    PREHEAT oven to 350° F. Grease 13 x 9-inch baking dish.

    COMBINE cheese, egg product, evaporated milk, salt and black pepper in large bowl. Add potatoes, onion, bell pepper and bacon, mix well. Pour mixture into prepared baking dish.

    BAKE for 60 to 65 minutes or until set.

    Ingredients:

    • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
    • 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
    • 1 teaspoon vanilla extract
    • 3 cups miniature marshmallows
    • 1 1/2 cups coarsely chopped walnuts

    Directions:

    LINE 13 x 9-inch baking pan with foil; grease lightly.

    MICROWAVE morsels and sweetened condensed milk in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in vanilla extract. Fold in marshmallows and nuts.

    PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.

      I make this recipe all the time and use different extracts and nuts to enhance the flavor during certain holidays. My favorite is to use peppermint extract instead of vanilla and add crushed mints on top before I refrigerate it. I also only use 1 1/2 c marshmallows and I put it into a 8x8 pan or loaf pan for thicker pieces.
