Pacific Rim Wraps with Creamy Citrus Ginger Dressing are perfect for a meal on the go. Everyone is sure to love the crunchy and tart filling tossed with an Asian-inspired creamy citrus ginger dressing.
Ingredients:
DRESSING
2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
5 tablespoons lemon juice
1/4 cup vegetable oil
3 tablespoons granulated sugar
2 teaspoons ground ginger
1 teaspoon salt
1/4 teaspoon ground black pepper
SALAD
1 pkg. (6.5 oz.) or 4 cups washed salad greens
3 cups shredded, cooked chicken (about 2 to 3 boneless chicken breast halves)
1 cup matchstick or shredded carrots
1 cup fresh sugar snap pea pods, cut in half
1/2 cup sweetened dried cranberries
1/4 cup toasted slivered almonds (optional)
6 (8-inch) flour tortillas
Directions:
FOR DRESSING:
PLACE evaporated milk, lemon juice, oil, sugar, ginger, salt and black pepper in small jar or resealable container; cover with lid. Shake well until blended. Makes 1 cup.
FOR SALAD:
COMBINE salad greens, chicken, carrots, sugar snap peas, dried cranberries and almonds in large bowl. Add 2/3 cup dressing; toss until evenly coated.
PLACE 1 cup salad mixture on each tortilla. Roll up tightly. Cut in half and serve along with remaining dressing, if desired. Or, wrap each in wax paper, foil or plastic wrap and refrigerate to eat later.
TIPS:
• Dressing can be made a day ahead and refrigerated. Shake well before using.
• Use pre-cooked grilled chicken strips to save time.
• Look for pre-packaged matchstick carrots in your local store’s produce section.

Quick and easy and very tasty. Even the picky ones loved it. Only changes I made were alfalfa and bean sprouts for the snap peas and I added some orange bits (no snaps in the cupboard, but we had a lot of oranges). Next time, I'll try flatbread for the wraps.

A flavorful vinaigrette drizzled over grapefruit, avocados and tomatoes will make this a salad to serve when you want to make an impression.

Ingredients:
2 medium pink grapefruit
2 tablespoons MAGGI Seasoning Sauce
2 tablespoons white wine vinegar
1 1/2 tablespoons olive oil
4 green lettuce leaves or banana leaves
2 medium avocados, halved, pitted, peeled and cut into thin strips
2 medium yellow tomatoes, each cut into 6 wedges
Directions:
HALVE grapefruits. Cut between the rind and the pulp. Hold over a bowl to catch juice and cut between membranes to remove segments.
WHISK together seasoning sauce, vinegar and oil in small bowl. Mix in grapefruit juice. Set aside.
LINE large platter with lettuce leaves. Artistically arrange grapefruit segments, avocados and tomatoes. Drizzle dressing mixture over salad. Serve immediately.

This light-as-a-cloud mousse is the perfect backdrop for fresh berries and fruit.
Ingredients:
4 oz. NESTLÉ® TOLL HOUSE® Premier White Baking Bar, broken into small pieces
1 cup heavy whipping cream, divided
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Directions:
MICROWAVE broken baking bars and 1/3 cup cream in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 45 seconds; STIR. If pieces retain some of their original shape, microwave at additional 10- to 15-second intervals, stirring just until melted. Cool completely.
BEAT remaining 2/3 cup cream, powdered sugar and vanilla extract in small mixing bowl until stiff peaks form (do not overbeat).
FOLD melted baking bar mixture into whipped cream. Spoon into four individual dishes. Refrigerate for at least 15 minutes before serving.
NOTE: for soft-set mousse, beat cream just until soft peaks form. Mousse can also be layered with fresh berry slices.
