3 cups mixed salad greens

Directions:
TOSS mixed greens and vinaigrette together. Divide prepared pasta between plates; top with greens. Season with pepper.

Tuscan flavors will delight family and friends in this easy to make Pesto Chicken Flatbread Pizza. Great as a main dish or side dish to complement a meal.
Ingredients:
2 Tuscan-style flatbreads (about 3.5 ounces each)
1/4 cup BUITONI Refrigerated All Natural Reduced Fat Pesto with Basil
2/3 cup sautéed or cooked chicken breast strips
2 tablespoons shredded mozzarella cheese
1/4 cup (.75 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
Directions:
PREHEAT oven to 375° F. Place flatbreads on baking sheet.
SPREAD pesto sauce evenly over each flatbread to within 1/2 inch of edge. Top each evenly with chicken, mozzarella cheese and Parmesan cheese.
BAKE for 8 to 10 minutes or until flatbread is crisp and cheese is melted.
Cooks Tip: Refer to your flatbread packaging to determine recommended bake temperature and time as each brand varies.
NOTE: Try substituting regular BUITONI Refrigerated Pesto with Basil.

These Zucchini Boats Stuffed with Lentils are a unique way to serve a nutritious vegetable side dish.
Ingredients:
3 tablespoons vegetable oil, divided
1 small onion, chopped
1 clove garlic, chopped
1 1/2 cups cooked lentils
2 tablespoons tomato paste
2 tablespoons MAGGI Seasoning Sauce
4 large zucchini, cut in half and flesh removed leaving skins intact
6 teaspoons crumbled Cotija cheese
Chopped cilantro for garnish
Directions:
HEAT 1 tablespoon oil in large skillet over medium heat. Add onion and garlic; cook, stirring frequently, until tender. Add lentils, tomato paste and seasoning sauce; cook, stirring frequently, for 2 minutes or until heated through. Fill zucchini boats evenly with lentil mixture.
HEAT remaining 2 tablespoons oil in same skillet over medium-low heat. Add stuffed zucchini boats; cook for 10 minutes or until tender. Garnish each zucchini boat with cheese and cilantro; serve immediately.

Rich and truly divine fudge! The easy way is the microwave method. This Rocky Road Fudge is a delicious mixture of chocolate chips, sweetened condensed milk, marshmallows and walnuts. It is easy to make and perfect to bring to all of your holiday parties!
Ingredients:
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
1 teaspoon vanilla extract
3 cups miniature marshmallows
1 1/2 cups coarsely chopped walnuts
Directions:
LINE 13 x 9-inch baking pan with foil; grease lightly.
MICROWAVE morsels and sweetened condensed milk in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in vanilla extract. Fold in marshmallows and nuts.
PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.

I make this recipe all the time and use different extracts and nuts to enhance the flavor during certain holidays. My favorite is to use peppermint extract instead of vanilla and add crushed mints on top before I refrigerate it. I also only use 1 1/2 c marshmallows and I put it into a 8x8 pan or loaf pan for thicker pieces.
