Pineapple Chicken with Baby Potatoes

Citrus lovers will adore this meal! The pineapple chicken is paired with a baby potato side dish. A spritzer adds a sparkly start and lemon sorbet a zesty finish to this meal.

Ingredients:

  • 1 cup NESTLÉ PURE LIFE Purified Water (or fruit flavored, if desired)
  • 2 tablespoons fresh lime juice
  • 16 fresh mint leaves
  • 1 1/2 cups Orange Tangerine Flavor NESTLÉ® JUICY JUICE® 100% Juice
  • 1 cup diet tonic water
  • Ice cubes (about 2 cups total)

Directions:

COMBINE water, lime juice and mint leaves in 2-cup measuring cup or bowl. Using the back of a spoon or fork, press down firmly to crush the mint leaves, allowing the flavor to be released.

POUR mint mixture into small pitcher; stir in Juicy Juice. Let steep for at least 15 minutes or cover with plastic wrap and refrigerate for up to 8 hours. (After 8 hours, remove mint and add fresh mint just before serving.) Add tonic water; stir gently. Pour into 4 tall glasses filled with ice. Serve immediately.

Ingredients:

  • 2 cups cooked white rice, kept warm
  • 1 tablespoon vegetable oil
  • 2 boneless, skinless chicken breast halves, cut into bite-size pieces
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1 1/2 teaspoons cornstarch
  • 1 to 2 teaspoons yellow curry powder
  • 1 MAGGI Chicken Flavor Bouillon Cube
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon red pepper flakes or to taste
  • 1 red bell pepper, cut into 1/2-inch pieces
  • 3 cups fresh or frozen broccoli florets, thawed and drained
  • 1 can (8 ounces) pineapple chunks in juice, drained

Directions:

HEAT oil in large, nonstick skillet over medium-high heat. Add chicken; cook, stirring occasionally, for 3 minutes or until chicken is no longer pink. Reduce heat to medium; stir in evaporated milk, cornstarch, curry powder, bouillon, ginger and red pepper flakes. Continue cooking until mixture begins to gently simmer and bouillon is dissolved.

STIR in bell pepper and broccoli (if using frozen broccoli, add for last 3 minutes). Cover; gently simmer for 6 minutes or until broccoli is tender. Remove from heat; stir in pineapple. Serve with cooked rice.

TIP:
• If your family is new to curry, start with 1 teaspoon of curry powder. Taste and add more, if desired.

    I have tried several of the recipes in the book I received from Carnation. This one is by far our favorite. I only used 1 tsp. of curry since it was new to my family but I will increase it to 2 tsp. next time. I love recipes that can be made in one pan. I started the rice then prepped and cooked the dish while the rice cooked. It was a great recipe to try on a week night.   • 1 1/2 lb. baby red potatoes, halved, boiled and drained
  • 3 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 jalapeños, seeded and chopped
  • 4 teaspoons MAGGI Seasoning Sauce

Directions:

HEAT oil in large skillet over medium heat; add onion and jalapeños. Cook until tender. Add potatoes and seasoning sauce. Cook, stirring occasionally, for 5 minutes or until potatoes are caramelized.

    Ingredients:

    • 1 package (16.5 ounces) refrigerated sugar cookie bar dough
    • 6 tablespoons finely chopped crystallized ginger
    • 1 container (14 ounces) Zesty Lemon HÄAGEN-DAZS Fat Free Sorbet
    • 1/3 cup chopped pistachios

    Directions:

    PREHEAT oven to 325° F.

    BREAK dough along pre-scored lines. Dip the top of each square in chopped ginger. Place 2 inches apart on ungreased baking sheets, ginger side up.

    BAKE for 14 to 16 minutes or until golden around edges. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Top each cookie with a small scoop of sorbet. Sprinkle with about 1/2 teaspoon chopped pistachios. Serve immediately.
