Ingredients:

  • 1/2 cup BUITONI Refrigerated All Natural Pesto with Basil
  • 3 tablespoons balsamic or red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 bag (10 to 11 oz.) torn lettuce leaves, (or 8 cups)
  • 1 large tomato, chopped
  • 1 cup Italian-style croutons, (for topping)

Directions:

COMBINE pesto, mustard and vinegar in small bowl; whisk until smooth.

COMBINE lettuce, tomato and dressing in large bowl; toss well. Top with croutons.

Ingredients:

  • 1 (3 to 4 pounds) bone-in half turkey breast, thawed if frozen
  • 1/4 cup Apple NESTLÉ® JUICY JUICE® 100% Juice
  • 2 tablespoons butter, melted
  • 1/2 teaspoon MAGGI Granulated Chicken Flavor Bouillon
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme leaves
  • 1 clove garlic, finely chopped

Directions:

PREHEAT oven to 325° F. Adjust oven rack to the middle of the oven.

PLACE turkey, skin-side-up, on rack in shallow roasting pan.

MIX Juicy Juice, butter, bouillon, paprika, thyme and garlic in small bowl. Brush turkey with half of mixture.

ROAST for 30 minutes; brush with remaining butter mixture. Roast about 1 hour longer or until meat thermometer reads 155° F. Remove from oven; transfer to cutting board and tent with foil. Let stand for 15 minutes.

NOTE: During the 15 minute resting time, the turkey breast continues to cook and will reach 160° F, an ideal temperature. This step facilitates a moist turkey breast and easier carving.

  • 2 (about 1 1/2 pounds total) large russet potatoes, peeled and cut into cubes
  • 1 can (7.6 fluid ounces) NESTLÉ Media Crema Ligera Lite Table Cream
  • 1 tablespoon MAGGI Granulated Chicken Flavor Bouillon
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley (optional)

Directions:

PLACE potatoes in large saucepan; cover with cool water. Bring to a boil. Boil for 15 to 20 minutes or until tender. Drain.

RETURN potatoes to saucepan; add media crema, bouillon and garlic powder. Beat with hand-held mixer until creamy. Stir in parsley. Serve warm.

    Ingredients:

    • 4 (1-cup vol each) 4-inch diameter mini-pie shells
    • 3/4 cup granulated sugar
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 2 large eggs
    • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
    • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk

    Directions:

    PREHEAT oven to 425° F.

    MIX sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

    POUR into shells.

    BAKE for 15 minutes. Reduce oven temperature to 350° F.; bake for 30 to 35 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this may cause filling to separate from the crust.)

    NOTE: May use refrigerated or homemade single pie crust to make 4 mini-pie shells. Lay rim of mini-pie pan on rolled out dough. Cut circle 1/2-inch larger than mini-pie to allow for dough to form fluted edge.

    FOR LOWER FAT/CALORIE PIES, substitute NESTLÉ® CARNATION® Lowfat Evaporated or Fat Free Evaporated Milk.

    NOTE: If using metal or foil pans, bake on preheated heavy-duty baking sheet.

      Use Muffin Tins!

      I couldn't find any small pans and needed to make these with my sons kindergarten class. I used muffin tins sprayed with nonstick spray. Unroll refrigerated pie dough and cut circles with a round cutter. Be sure they are large enough to go up the sides of the tin. Fill 2/3 full with pumpkin filling. Bake at 375 for about 25-30 minutes. They popped right out and with a squirt of whipped cream were so cute and the perfect size for the kids!

      This recipe is even *easier* if Libby's Easy Pumpkin Pie Mix is used. It cuts a bunch of time, steps and ingredient purchases out. Since the only size I've ever seen is the large, this makes 8 individual pies so everyone, not just the kids get their own pie - the adults seem to be delighted with that, too! (If I really get fancy, I put the initials of the guests on the pies with a thin line of whipped topping from a sandwich bag with a small corner cut out turned into a squeeze bag - that gets giggles and fun)

      My 3 nieces, 2 nephews and 1 granddaughter, ages 5 to 10, got together this past weekend to bake. Having not seen this recipe yet, we followed the instructions on the can of Libby's Solid Pack Pumpkin. Each child made their own pie and tried to individualize it by putting pie crust cutouts on top (they sank because they were too thick). We baked those 6 mini pies on a cookie sheet at 425 degrees for 15 minutes then turned the oven down to 350 and baked for another 15 minutes. Upon checking, 5 pies were done and the 6th one was returned to the oven for an additional 5 minutes. The kids loved these pies and couldn't wait to eat them. They're ready to make them again!

      When my mother turned 60 years old I made her 60 miniature pumpkin pies. I made the dough from scratch. I then used a glass to cut out circles and placed the circles in a muffin tin. I mixed the pumpkin filling as directed and filled the crusts. Then I baked them until they were done. My mom loved them!!
