Roasted Lamb with Mint Basil Pesto and Mashed Potatoes

Mint-basil pesto drizzled over roasted rack of lamb makes a flavorful main dish perfect for special occasions. Pair with simples sides of roasted carrots and garlic rosemary mashed potatoes for a festive meal. For a light spring dessert, try this delicious and refreshing No-Bake Lemon Cloud Pie.

Ingredients:

  • 2 pounds small- to medium-size carrots
  • 1 cup sliced shallots
  • 2 teaspoons fresh thyme
  • 3 tablespoons extra-virgin olive oil
  • Coarse salt and ground black pepper

Directions:

PREHEAT oven to 425° F. Place rack in center of oven.

PEEL carrots and trim green top, leaving about 1/2–inch. Cut larger carrots in half lengthwise and place in a rimmed baking sheet. Add shallots and thyme; drizzle with oil and stir to coat. Season with salt and pepper.

ROAST for about 30 to 35 minutes or until tender and lightly browned. Season with additional salt and pepper, if desired.

    Ingredients:

    • 2 (1 1/2 pounds each) frenched racks of lamb (about 8 ribs each)
    • Kosher salt and ground black pepper
    • 2 tablespoons vegetable oil
    • 1 container BUITONI Refrigerated All Natural Pesto with Basil (7 oz.), at room temperature
    • 1/3 cup chopped fresh mint leaves
    • 2 tablespoons water
    • 1 to 2 tablespoons fresh lemon juice

    Directions:

    ALLOW lamb to come to room temperature for about 30 minutes before roasting. Season lamb on all sides with salt and pepper.

    PREHEAT oven to 400° F.

    HEAT oil in large oven-proof skillet over medium-high heat. Place lamb racks, fat-side-down, in skillet; sear until browned. Turn racks over and sear other side. Turn racks meat-side up; place skillet in the oven for 15 to 20 minutes or until thermometer placed in thickest portion registers 125-130° F (medium-rare). Transfer lamb racks to work surface; let rest for 10 minutes. Meanwhile, prepare the pesto.

    COMBINE pesto, mint and water in medium bowl; stir well to combine. Stir in 1 tablespoon lemon juice. Taste and add 1 more tablespoon if you prefer more tang. Cut the lamb between the bones into single chops. Arrange chops on plates; drizzle with pesto.

    • 1 salt and ground black pepper to taste

    Directions:

    PLACE potatoes and garlic in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until potatoes are tender; drain.

    RETURN potatoes and garlic to saucepan. Beat with hand-held mixer until combined. Add cheese, butter and rosemary; beat until smooth. Gradually beat in evaporated milk until fluffy. Season with salt and pepper.

    * NOTE: For a lower-fat version of this recipe, substitute NESTLÉ CARNATION Evaporated Lowfat Milk for Evaporated Milk.

    • 1 prepared 9-inch (6 oz.) shortbread crumb crust
    • 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
    • 1/2 cup (about 3 medium lemons) fresh lemon juice
    • 1 teaspoon grated lemon peel
    • 2 cups frozen whipped topping, thawed
    • Grated lemon peel or lemon slices (optional)

    Directions:

    BEAT sweetened condensed milk, lemon juice and peel in small mixer bowl until combined. Fold in whipped topping; pour into crust. Cover; refrigerate for 2 hours or until set. Garnish with lemon peel.

    NOTE: For a lower calorie and fat version of this recipe, a 6-oz. prepared reduced-fat graham cracker crust and fat-free frozen whipped topping can be substituted for the shortbread crumb crust and frozen whipped topping.
