Ingredients:
1/4 cup (1/2 stick) butter or margarine
1/4 cup all-purpose flour
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 pkg. (16 oz.) frozen mixed vegetables, prepared according to package directions
1 can (14.5 oz.) vegetable broth
1/4 teaspoon onion salt
Directions:
MELT butter in medium saucepan over medium heat. Stir in flour. Gradually stir in evaporated milk. Cook, stirring constantly, until mixture comes to a boil. Add vegetables, broth and onion salt. Heat through.

This is a very quick and easy soup. Instead of the onion salt, I sauted chopped onions in butter and added salt separately. I also added a can of drained diced tomatoes and used california blend frozen veggies. It turned out wonderfully. Even my kids ate it! I will definitely make this one again!

Beef Tenderloin over Greens is a terrific tasting and attractive presentation. Great for casual entertaining.
Ingredients:
1 cup boiling water
1 teaspoon MAGGI Instant Beef Flavor Bouillon
1/4 cup balsamic vinegar
2 tablespoons light brown sugar
1 teaspoon olive oil
12 ounces beef tenderloin, fat trimmed, cut into 4 pieces
8 cups baby salad greens
1 cup cherry tomatoes, cut in half
Directions:
COMBINE water and bouillon in small bowl; stir to dissolve. Stir in vinegar and sugar.
HEAT oil in large, nonstick skillet over medium-high heat. Add beef; cook on each side for 3 to 5 minutes or until desired doneness. Remove from skillet. Slice beef into strips. Divide baby greens and tomatoes among plates; top with beef.
ADD sauce mixture to skillet; stir to loosen brown bits from bottom of skillet. Cook over medium-high heat, without stirring, for 5 minutes or until reduced by half. Pour over salad.

I wasn't sure that this salad would be filling enough for us, but it was just the right amount of food and it tasted great. It was nice to be able to make a good dressing for the salad on my own, instead of relying on something from a bottle to liven up the meal. I tried this last night, but substituted Wine Vinegar for the Balsamic and used Romaine instead of baby greens. It turned out very nice. I would suggest tossing the romaine lettuce with the sauce prior to serving so that it may soak up the flavour.

Ingredients:
3/4 cup yellow corn meal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon minced fresh sage
1 cup NESTLÉ® CARNATION® Evaporated Milk
1 large egg
2 tablespoons unsalted butter, melted
1 tablespoon unsalted butter, softened
Directions:
PREHEAT oven to 425° F. Grease 8 x 4-inch loaf pan.
SIFT together cornmeal, flour, sugar, baking powder and salt in large bowl. Stir in sage. Whisk evaporated milk, egg and melted butter in small bowl. Slowly pour milk mixture into cornmeal mixture; stir just until moistened. Pour batter into prepared loaf pan.
BAKE for 15 minutes. Spread top of the bread with softened butter. Bake an additional 10 minutes or until top is lightly browned and firm to the touch at the center. Cool in pan on wire rack for 20 minutes. Remove from pan; cool completely.

Ingredients:
1/2 cup granulated sugar
2 tablespoons cornstarch
2 cinnamon sticks
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 1/2 teaspoons vanilla extract
6 cups assorted fresh fruit (apples, bananas, grapes, mangoes, papayas, peaches, and/or strawberries)
Ground cinnamon, (optional)
Directions:
COMBINE sugar, cornstarch and cinnamon sticks in medium saucepan. Gradually stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens. Remove from heat and remove cinnamon sticks; stir in vanilla extract. Refrigerate for 2 hours or until well chilled. Makes about 1 1/2 cups.
ARRANGE fruit in dessert dishes. Top with sauce. Sprinkle with cinnamon, if desired.
TIP: Refrigerate leftover sauce in covered container for up to 3 to 4 days.

My family didn't care for this one. The thickness of the sauce and the heaviness of the cinnamon took away from the flavor of the fresh fruit, rather than add to it. I would suggest using less corn starch and perhaps a little nutmeg with the cinnamon.

I read a few rating comments prior to making this sauce, so I prepared to make adjustments for thickness and richness. I made 2 versions- an original recipe, and one with less cornstarch and fat free evaporated milk.
In agreement with other tasters, the original was a bit much for fresh fruit, but it was Great served warm with warm spiced peaches and pears.We topped it off with nutmeg rather than cinnamon.
The lighter version was much better on fresh sliced fruit, but I think with strawberries and grapes, we would have preferred to omit the cinnamon sticks
