Ingredients:
1/2 cup BUITONI Refrigerated All Natural Pesto with Basil
3 tablespoons balsamic or red wine vinegar
2 teaspoons Dijon mustard
1 bag (10 to 11 oz.) torn lettuce leaves, (or 8 cups)
1 large tomato, chopped
1 cup Italian-style croutons, (for topping)
Directions:
COMBINE pesto, mustard and vinegar in small bowl; whisk until smooth.
COMBINE lettuce, tomato and dressing in large bowl; toss well. Top with croutons.

This Crispy Baked Dijon Chicken has a delightful tang.
Ingredients:
Nonstick cooking spray
1/4 cup NESTLÉ® CARNATION® Evaporated Fat Free Milk
3 to 4 tablespoons Dijon mustard
1/4 cup plain, dry bread crumbs
1/4 cup (.75 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves
Directions:
PREHEAT oven to 475° F. Spray 13 x 9-inch baking dish with nonstick cooking spray.
COMBINE evaporated milk and mustard in shallow bowl. Combine bread crumbs and cheese in separate shallow bowl. Dip chicken into milk mixture, coating both sides, then into bread crumb mixture. Place in prepared dish.
BAKE for 15 to 20 minutes or until chicken is golden brown and no longer pink in center.

This was very easy to prepare. I used 4 very thick chicken breasts and cut them in half. I also use Italian seasoned bread crumbs because I did not have plain bread crumbs. I think the heat was too high. I sprayed a glass pyrex 13x9 with Pam and most of my breading stuck to the pan. I also had the rack in the middle of the oven, I have an electric oven so I think next time I will bake at 400 for about 30 minutes. The 15 to 20 minutes time frame is probably for thin breasts. Family was pleased with overall taste and said they would eat this dish again. I also have two granddaughters 6 & 4 who said they enjoyed the meal.

I made this recipe for my boyfriend and myself one night because I was in the mood for something 'different'. My boyfriend is a very selective eater and although I do give him credit for venturing out and at least tasting new things, he had made it clear to me that he does not like chicken. Instead of full chicken breasts, I opted to use tenders. They came out beautifully. We made rice as a side dish which was a perfect accent. He loved the dish, and told me he wants it again. He actually wants me to make chicken again (in the form of tenders nonetheless), but still. Plus, it really was easy to make, the ingredients are easily affordable and it's perfect for college students that have small spaces to work with and not much money in the wallet.

These Zucchini Boats Stuffed with Lentils are a unique way to serve a nutritious vegetable side dish.
Ingredients:
3 tablespoons vegetable oil, divided
1 small onion, chopped
1 clove garlic, chopped
1 1/2 cups cooked lentils
2 tablespoons tomato paste
2 tablespoons MAGGI Seasoning Sauce
4 large zucchini, cut in half and flesh removed leaving skins intact
6 teaspoons crumbled Cotija cheese
Chopped cilantro for garnish
Directions:
HEAT 1 tablespoon oil in large skillet over medium heat. Add onion and garlic; cook, stirring frequently, until tender. Add lentils, tomato paste and seasoning sauce; cook, stirring frequently, for 2 minutes or until heated through. Fill zucchini boats evenly with lentil mixture.
HEAT remaining 2 tablespoons oil in same skillet over medium-low heat. Add stuffed zucchini boats; cook for 10 minutes or until tender. Garnish each zucchini boat with cheese and cilantro; serve immediately.

This Easy Springtime Cheesecake makes a delicious and elegant dessert.
Ingredients:
CRUST
1 1/2 cups chocolate graham cracker crumbs
1/4 cup (1/2 stick) butter or margarine, melted
CHEESECAKE
36 NESTLÉ BUTTERFINGER or Milk Chocolate NestEggs
3 pkgs. (8 oz. each) cream cheese, at room temperature
1 cup granulated sugar
1 tablespoon vanilla extract
3 large eggs
TOPPING
1 container (16 oz.) sour cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
Directions:
PREHEAT oven to 350° F.
FOR CRUST:
GREASE bottom and side of 9-inch springform pan.
COMBINE graham cracker crumbs and butter in medium bowl. Press onto bottom of prepared pan. Place in freezer for 5 minutes.
FOR CHEESECAKE
SET aside 12 Nestlé NestEggs to use for garnish. Unwrap and cut remaining Nestlé NestEggs in quarters.
BEAT cream cheese and sugar in large mixer bowl until fluffy. Beat in vanilla extract. Beat in eggs one at a time, beating well after each addition. Sprinkle cut Nestlé NestEggs over bottom of crust to 1/2-inch from edge. Pour filling into crust.
BAKE for 50 minutes or until center is set and edges begin to crack. Cool for 2 minutes before adding sour cream topping.
FOR TOPPING:
COMBINE sour cream, sugar and vanilla extract in medium bowl; mix well. Spread over surface of warm cheesecake. Bake for 5 minutes. Remove from oven and cool on wire rack.
REFRIGERATE for several hours or overnight. Remove side of springform pan. Garnish each slice with one unwrapped Nestlé NestEgg.
NOTE: Try substituting 1 1/2 cups NESTLÉ TOLL HOUSE Milk Chocolate Morsels, Semi-Sweet Chocolate Morsels or SWIRLED Semi-Sweet & White Chocolate Morsels in place of 36 NESTLÉ NestEggs.
Sprinkle 1 cup morsels over bottom of crust before pouring filling into crust. After cheesecake is baked and cooled, sprinkle 1/2 cup morsels around top edge of cheesecake as garnish.

This cheese cake was very good. My family counts on my regular cheesecake for dessert on the holidays. They were disappointed when they found out I made a different cheesecake, but loved it once they actually tasted it. I'll make it again.

This recipe is easy and delicious. My daughter came to visit from out of town and we decided to try this together. It took us back to the days when she was a little girl and would watch and "help" me bake. We created another kitchen memory and although she says she's not a good baker or dessert maker, she plans to make this for her husband when she goes back home. I am known around the office for making baked goods (primarily cheesecakes), and when I brought this one in, it blew all the other cheesecakes I have ever made out of the water!!! I found it to be easier than the others I have made in the past, and everyone around the office is just raving about this one. I had never made a cheesecake before so this was a little tricky for me. I will make this again though cause even as a new cheesecake baker it turned out pretty good. I would have to say though that the crust is very hard. I made this for Easter dinner at my mothers and my grandparents had a hard time chewing the crust. Im not so sure though that I didnt do something wrong there. The taste of the cake and the crust were delightful though!!
