The kids and I had a great time preparing the Sangria. We are not mint fans so for both recipes we did leave it out. We followed the first reciped to a T except for the mint. The second time we decided to play around and mix and match the fruit. Bot of the recipes were great and we will try them again.

This dish was a big hit in my house as well. I love how easy it is to cook. Instead of sun-dried tomatoes I used canned Italian style tomatoes and think it was more to our liking that way. This has become a family favorite.

    Billy from Birmingham, AL

Wow - everyone loved this dish. I mean REALLY loved it. It is unbelievably easy to make. I took the advice of others and added a spash of heavy cream, reduced the motz. cheese slightly, and added garlic. Also, I decided to buy pesto sauce in a jar instead of the fresh kind because of the price. The only problem is the cost is very high. Otherwise, the dish was a hit. Althought I'm not a big fan of sun-dried tomatoes, they made this dish look incredible. Mine turned out identical to the picture!

It was a great meal!!! My fiancee made it for me, and it was easy to make and it took no time at all i ate it and could not help myself from feeling that something was missing.... i think if you add chicken to it that would make it more flavorful... it was a great dish and i would make it again i would just add some chicken!!!

love the recipe! specially being a mother of a two year old. It's easy to make and wonderful tasting. We always like to eat our meals with some sort of chicken or meat, so I went ahead and cooked some chicken which I marinated with the same topics. We added the heavy cream as well as someone else suggested on this website. This one recipe will be a keeper in our kitchen. thanks

    Very Good

I just made this recipe and found it delciious. My only suggestion would be to add a little cream to the pesto.. it makes it creamier and maybe cut back on the parmasean cheese to about 1/3 of a cup . Other than that... I will definitely be looking forward to this tomorrow for lunch.

    Excellent Alternative!!!!

    Jennifer from NH

My boyfriend and I love this tortellini salad. It's easy to make and it's delicious. The one thing I'd recommend is adding some heavy cream to the pesto sauce so the salad can be a little creamier. We find it that it becomes a little too dry with just the pesto sauce.

I cook and plan for large groups at a retreat house here in Miami Fl. Trying to keep cost down and still serve tasty meals becomes a very carefully planned menu. Just add extra grated cheese, which I do anyway, because it makes a difference, always.
