This Avocado and Tomato Salad with Confetti Vinaigrette makes for a colorful display of farm-fresh produce. Avocados and tomatoes take center stage when drizzled with this vibrant, well-seasoned vinaigrette.
Ingredients:
1 small red bell pepper, finely chopped
1 small onion, finely chopped
1/2 cup finely chopped fresh cilantro or parsley leaves
1/4 cup extra virgin olive oil
1/4 cup fresh lime juice
2 small jalapeños, finely chopped
1 clove garlic, finely chopped
1 tablespoon MAGGI Granulated Chicken Flavor Bouillon
4 medium tomatoes
2 medium ripe avocados
Directions:
COMBINE bell pepper, onion, cilantro, oil, lime juice, jalapeños, garlic and bouillon in medium bowl until well combined. Refrigerate for 30 minutes.
SLICE tomatoes or cut into wedges. Peel and slice avocados. Arrange tomato and avocado slices alternately on top of each other on large platter; drizzle with prepared dressing.
Cooks tips: This dressing is a great accompaniment to sautéed, roasted and grilled meat or seafood. It is also wonderful as a dipping sauce for bread.

This is an easy and quick meal using Chicken Alfredo, but I tried Souffer's Creamed Chipped Beef over a baked potato and it was much better.

I was a little wary of trying the pasta on top of potatoes, but this wasn't bad at all. I added some shredded parmesan and basil. It was really easy to make. I'd never had the Skillet Sensations before - the veggies taste very fresh.

1 package (10 oz.) STOUFFER'S Welsh Rarebit, prepared according to package directions, kept hot
16 asparagus spears
4 strips bacon
Directions:
PREHEAT oven to 425° F.
WRAP each strip of bacon around 4 asparagus spears; place on baking sheet.
BAKE for 10 minutes; turn. Bake for an additional 10 minutes. Place on serving plate and top with Welsh Rarebit.

I pre cooked the bacon first in the micro.. this cuts back on the fat and cooking time.. We like our Asparagus with a snap to it.. Other than that.. followed the recipe to the T... It was a hit with Hubby!

This was very easy to make and was excellent! I've never fixed Asparagus before but, was able to make this and it was great with lots of flavor. We'll fix it again and soon. The only thing that I did different from the recipe is I used 12 spears instead of 4 (my spears were really small) and I brushed on some olive oil before baking. What a great dish!!
The other thing that I did was to make the Welsh Rarebit from scratch. I used 2 Tbls of butter, 4 oz of shredded sharp cheddar cheese, 1/4 cup beer (Coors Light), salt & pepper to taste. It was good too.

Ingredients:
3 1/2 cups all-purpose flour
1/3 cup granulated sugar
4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) cold butter, cut up
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 1/2 cups buttermilk
1 container (12 oz.) frozen lite whipped topping, thawed
4 cups sliced strawberries
Directions:
PREHEAT oven to 400° F. Grease baking sheets.
COMBINE flour, sugar, baking powder, baking soda and salt in large bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in morsels. Stir in buttermilk with a fork just until moistened. Knead 2 or 3 times on floured surface. Pat to 3/4-inch thickness. Cut into sixteen 2 1/2 x 2 1/2-inch diamonds; place on prepared baking sheets.
BAKE for 12 to 14 minutes or until lightly browned. Remove to wire racks to cool completely.
CUT one shortcake in half horizontally. Spread bottom half with whipped topping; top with strawberries. Cover with shortcake top; layer with more whipped topping and strawberries. Repeat with remaining shortcakes. Serve immediately.

What a change in the regular shortcake I grow up on the chocolate chips just made it so much better. Only 1 little problem I found in the directions is doesn't say anything about the chocolate chips so I just placed them on top of the whipped topping then the strawberries on top of them.
