Healthy Choice
Nancy Oltman from

This recipe is not only tasty, but very healthy. I am a diabetic so watch carbs and fat content. Red potatoes are the least starchy potato and of course the instant dried milk is low in fat. For all of that, the taste is fantastic--the best of both worlds.

Awesome Potato Salad Recipe
Marsha Downie from

I just wanted to say that this potato salad is so delicious!! I made it for us at the lake to share among our friends and everyone just loved it. It is so different from the usual way of potato salad but just as good. I had never heard of having green beans in a salad such as this but it was absolutely great! I did add a few things to this recipe and as a mistake I used mayonnaise in place of cream cause I had forgotten to get the cream at the store. It still worked out grand though.

Ms. Blaschuk from

We had this for dinner last night. I had some left over ham from the night before which I cut into small cubes and added to this salad. WOW! It was sensational. The first thing my husband said after looking at 'dinner' was, "I DO NOT NEED TO EAT ANOTHER FAT FILLED THING COVERED WITH MAYONAISE" - wasn't he surprised?! No mayo. By the way, he LOVED it! The milk and dijon dressing was such a nice change and the addition of the ham made it a great meal. This will be a family staple from now on!

There's two ways to make this. One as the recipe as written and for those of us who need our mayo in our potato salad by adding that ingredient to the basic recipe. Good both ways. I don't particularly like beans so I added uncooked frozen peas (thawed of course) and they were great in this recipe.

This sweet corn-studded casserole is a great side to serve with practically any main dish. Goes well with Mexican, South American and American cuisine.
Ingredients:
1/2 cup masa harina flour (Mexican corn masa mix)
1/4 cup (1/2 stick) butter or margarine
2 tablespoons vegetable shortening
2 cups frozen whole-kernel corn, partially thawed
3 tablespoons cold water
1/4 cup granulated sugar
3 tablespoons yellow corn meal
2 tablespoons NESTLÉ® CARNATION® Evaporated Milk
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon chili powder (optional)
Directions:
PREHEAT oven to 350° F. Lightly grease 9-inch pie plate.
PLACE flour, butter and vegetable shortening in food processor; cover. Process until creamy. Add corn and water; process until corn is coarsely chopped. Combine sugar, corn meal, evaporated milk, baking powder and salt in medium bowl. Stir in corn mixture until combined. Spread into prepared pie plate. Sprinkle with chili powder.

With an added twist
Connie Edwards from
Anoka, MN
I think that with the chili powder sprinkling, I'd add a small can of drained green chilies to the corn when being chopped.
If there were small children in the house party, I'd probably substitute a little paprika to sprinkle on top (no green chilies, of course).

I have made this recipe several times now and it's always a winner. Had it for a luncheon today with some girlfriends and it was a huge hit. Tastes exactly like the little scoop of corn that you get at a popular Mexican restaurant. They're always a little stingy with it. I never have Masa, so I just substitute flour and it works fine.

My husband and I wanted to try this recipe because it sounded like something that is served at a mexican restaurant. It tasted just as sweet and moist as we remembered. One note on the preparation, I would recommend using warm water in the food processor. The partially thawed corn and butter did not want to process because it was too cold. Thanks!

We have six grandkids, from 2 to 12, and our big kids? So we whip the ice cream, mix in the different treats that the kids like. It makes the ice cream creamier, more favorable and easier for the young one's to eat. This has been grandma and grandpa tested,(everytime) and kids like it too!
