A healthy and delicious snack. These Apple Bran Muffins make a great everyday breakfast or lunchbox treat.
- 1 cup all-purpose flour
- 1/3 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup (1 medium) peeled, finely chopped tart apple
- 3/4 cup water
- 1/2 cup NESTLÉ® CARNATION® Instant Nonfat Dry Milk
- 1/4 cup vegetable oil
- 1 large egg
- 2 cups bran flake cereal
PREHEAT oven to 400° F. Grease or paper-line 12 muffin cups.
COMBINE flour, sugar, baking powder, salt, cinnamon and nutmeg in medium bowl. Mix apple, water, dry milk, oil and egg in small bowl. Add to flour mixture; stir until moistened. Stir in cereal. Spoon into prepared muffin cups, filling 2/3 full.
BAKE for 12 to 15 minutes or until wooden pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm.

Apple Bran Muffins
Apple bran muffins made with this recipe are delicious, nutritional, easy to make and go very well at breakfast or lunch. My wife and I are retired and in our late 60's so eating right is important to us. These muffins fit in well with our meal planning and are also enjoyed by the grandchildren when they come to visit.
