Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup (1 medium) peeled, finely chopped tart apple
  • 3/4 cup water
  • 1/2 cup NESTLÉ® CARNATION® Instant Nonfat Dry Milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 cups bran flake cereal

Directions:

PREHEAT oven to 400° F. Grease or paper-line 12 muffin cups.

COMBINE flour, sugar, baking powder, salt, cinnamon and nutmeg in medium bowl. Mix apple, water, dry milk, oil and egg in small bowl. Add to flour mixture; stir until moistened. Stir in cereal. Spoon into prepared muffin cups, filling 2/3 full.

BAKE for 12 to 15 minutes or until wooden pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm.

She said she won't tire of eating them often and they are good for her too! In other words, I will have to make these often and take them to her every time I go to see her.     I made these for my breakfast meal. I substituted the nonfat dry powder milk with 3/4 cup nonfat milk and used for the oat bran cereal ingredient, 3 3/4 cups of honey and oat cereal with almonds and 1/4 cup with harvest cereal with strawberries and blueberries. Sweet and delicious. Even my son enjoy them.
