Apple Bran Muffins
A healthy and delicious snack. These Apple Bran Muffins make a great everyday breakfast or lunchbox treat.
- 1 cup all-purpose flour
- 1/3 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup (1 medium) peeled, finely chopped tart apple
- 3/4 cup water
- 1/2 cup NESTLÉ® CARNATION® Instant Nonfat Dry Milk
- 1/4 cup vegetable oil
- 1 large egg
- 2 cups bran flake cereal

COMBINE flour, sugar, baking powder, salt, cinnamon and nutmeg in medium bowl. Mix apple, water, dry milk, oil and egg in small bowl. Add to flour mixture; stir until moistened. Stir in cereal. Spoon into prepared muffin cups, filling 2/3 full.
BAKE for 12 to 15 minutes or until wooden pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm.

I originally made them for my husband, but my kids loved them!(7 and 2 years old) I used applesauce instead of the oil and they turned out great. Quick and easy to make!

These were easy to make for me and now we have a nice breakfast (or anytime) treat! They are good for you and taste so good you wouldnt think so! excellent!
Moist and tasty
These are great for an on-the-go breakfast. I substituted bran cereal and added 1/2 cup of dried cranberries. Dee-lish!
Healthy addition to breakfast routine
I really love to have healthy muffins on hand (fresh or in the freezer), and these were a great addition to my line-up. I used half whole-wheat and half regular flour and it was fine. You would never know there were bran flakes in here!
Apple bran muffins are pretty good. My husband really enjoyed them. I'm more of a blueberry muffin girl but they weren't that bad.
