Apple Brown Rice Stuffing

Ingredients

1 1/2 cups uncooked brown rice
3 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice, divided
2 teaspoons margarine
1 apple, diced
1/2 cup chopped onion
1/2 cup sliced celery
1/3 cup raisins
1/2 teaspoon poultry seasoning
1/4 teaspoon dried thyme, crushed
1/4 teaspoon ground black pepper
1/3 cup bran
1/3 cup slivered almonds

 

Directions

PREPARE rice according to package directions, using 3 1/4 cups Juicy Juice for the liquid.

MELT margarine in large skillet over medium-high heat. Add apple, onion, celery, raisins, poultry seasoning, thyme and pepper; cook, stirring occasionally, until vegetables are crisp-tender. Stir in rice, bran, nuts and remaining 1/4 cup Juicy Juice.

USE as stuffing for poultry or pork roast, or place in greased 13 x 9-inch baking pan and bake in preheated 350° F oven for 35 minutes.

    I thought this recipe was pretty good except next time I will use chicken broth in place of the apple juice. The apple juice made the rice too sweet for me. I think the apple juice along with the apple and raisins makes the dish too sweet. I really loved the texture though!

    Great Pork Chop Stuffing

    Used as pork chop stuffing with 1/2 apple juice and 1/2 water. Everyone liked it. Used the leftover stuffing for lunch but added more raisins, almonds, bran and apple juice.

    I made this recipe using homemade apple juice, so I don't know if it made a difference in how the rice cooked. I followed the directions, but I had to cook the rice much longer than the recommended 40 minutes. I thought the recipe was pretty good, but my husband's not wild about brown rice. He thought it was ok. I baked it in the oven covered at 350 for about 30 minutes.

    This is definitely a good recipe that not only tastes great, but it is quick and easy to prepare. It went great w/ pork chops. Instead of cooking the ingredients in a skillet, I saved myself some time by putting these ingredients in a microwave dish and microwaved it for about 3 min. Then, I stirred it and added it to the rice I made w/ the apple juice. The ingredients may have been a little crispier than if you make it the way it instructs one to make it in the recipe, but it still tasted good and turned out great. I definitely recommend this to anyone that is in a hurry after getting home from work that wants a good side dish in addition to a salad and grilled meat.
