Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
  • 3 cups (about 3 medium) peeled, cored and finely chopped baking apples
  • 3/4 cup finely chopped pecans
  • Powdered sugar
  • Pecan halves (optional)

Directions:

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE flour, baking powder, cinnamon and nutmeg in medium bowl. Beat granulated sugar and butter in large mixer bowl until creamy. Beat in eggs and vanilla extract until smooth. Alternately beat in flour mixture and evaporated milk. Stir in apples and pecans. Spread batter into prepared baking pan.

BAKE for 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 20 minutes. Cut into bars. Dust with powdered sugar before serving and top with pecan halves, if desired.

    WOW! Moist and Delish!!!

    I've made this cake several times now and it is wonderful. I decided to followed the directions exactly and not change anything on the first try. It was very good, but we like spicy, so the second time I added a little less than 1 cup of raisins and upped the cinnamon to about 2 tsp, added about a tsp of cloves, it was delicious! I make a Pecan Praline Sauce and pour it over each piece while both are still warm...it's soooo yummie! or a simple sprinkling of powdered sugar. It's moist, delish and very easy to make. This cake can and will also stand alone, no problem!!!

    I made this for a church breakfast. I did not care for it. I think it maybe the nutmeg. It had a strange taste and the apples tasted like raisins. I did use splenda sugar blend. Maybe that's why it tasted strange. I want to try it again using sugar and eliminating the nutmeg

    I have made this cake 3-4 times and it is really good, the first time I followed the directions and used the Pecans, the next time I substituted walnuts, and added 1/2 cup of raisins and 1/4 tsp cloves, it was delicious! sometimes I sprinkle on powdered sugar and other times I make a caramel frosting. (brown sugar and water) or a powdered sugar frosting. then sprinkle with finely ground nuts. This cake is moist, tasty and easy to make.

    I was a bit disappointed with this spice cake, as it was nothing extraordinary. I added a bit of raisins to the batter, which added a touch of sweetness to it. A nice drizzle of icing would have added that "something" it seemed to be lacking. It was very moist and did freeze well. I think next time I will add some dried cherries and almonds to the batter.
