Apple-Filled Sweet Potato Nests

Ingredients

1 package (12 ounces) STOUFFER'S Harvest Apples, defrosted*
1 can (22 ounces) sweet potatoes or yams, drained
2 large eggs
2 tablespoons butter
1 tablespoon granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg

 

Directions

PREHEAT oven to 400° F. Lightly grease baking sheet.

WHIP sweet potatoes until smooth in large mixer bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season with salt.

SPOON mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Make a depression in each mound using back of a spoon to form a nest. Fill centers of nests with Harvest Apples.

BAKE for 30 minutes.

*DEFROST Harvest Apples in microwave on MEDIUM (50%) power for 6 to 7 minutes.

    Thanksgiving Favorite

    I made this for Thanksgiving. It was wonderful. Very easy to make. I'm ashamed to say I ate most of it before it got to the table. I used real apples which I coated with cinnamon. I also made one with marshmallows in the middle for my son. I highly recommend this dish.

    I cubed, boiled, then mashed 2 medium yams instead of using canned and cubed about 1 1/2 granny smith apples instead of the frozen ones. I wasn't sure if the frozen ones came with sugar and spices so I tossed my apples in a ziploc with a little sugar and cinnamon. This recipe has a little baked pie taste to it, yet not that sweet. Plain yams are okay to me but this stuff I wanted to gobble up.
