This white sauce recipe is a versatile and useful as a base for making cheese sauce or macaroni and cheese from scratch.
- 1/3 cup butter or margarine
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground white or black pepper
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 3/4 cup water
MELT butter in small saucepan. Stir in flour, salt and pepper. Gradually add evaporated milk and water. Cook over medium heat, stirring constantly, until mixture comes just to a boil.
Recipe makes 3 cups.
FOR HERB SAUCE:
PREPARE 1 cup White Sauce, adding 1 clove finely chopped garlic to butter. Add 1/4 teaspoon dried oregano, basil or sage to flour mixture. Proceed as above. Makes 1 cup.
FOR CHEESE SAUCE:
PREPARE 1 cup White Sauce, decreasing butter and all-purpose flour to 1 tablespoon each and the water to 1/3 cup. Eliminate the salt. Proceed as above. Stir in 1 cup (4 oz.) shredded or cubed processed cheese product until melted. Makes about 1 1/2 cups.
FOR CHEDDAR CHEESE SAUCE:
PREPARE 1 cup White Sauce, decreasing butter and all-purpose flour to 1 tablespoon each and the water to 1/3 cup. Proceed as above. Stir in 1 cup (4 oz.) shredded cheddar cheese until melted. Makes about 1 1/2 cups.

Perfect white sauce
This is great on pasta or as a "cream soup" base if you don't want to use canned soup. I added smoked paprika to it. It was perfect!
Tried this one the other night,added some "variations" to it,turned out very well & I will use this one again of that I am sure! We used it as an alfredo sauce. I was very surprised.

Delicious White Sauce
This is the best recipe for white sauce that I have ever used. I've added chopped onion and fresh sliced mushrooms and sauted them in the butter. It's absolutely delicious and so very easy to make. Thanks for the recipe.

I have used this sauce for pasta dishes instead of the traditional tomato sauce. I usually add some chopped onion to the butter and saute. I also add some canned mushrooms and bacon pieces. It is absolutely delicious!
Macaroni and Cheese
I am such a Macroni and Cheese freak. I have tasted so many types of cheese with macaroni and this sauce is my favorite.
This white sauce was wonderful. I would recomend adding a little bit of oregano.
