Rich and dense, this bittersweet chocolate pound cake has a hint of coffee. If you prefer your pound cakes "glazeless", dust the top of the cooled cake with powdered sugar.

Ingredients:

  • CAKE
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups water
  • 2 tablespoons NESCAFÉ TASTER'S CHOICE House Blend 100% Pure Instant Coffee Granules
  • 6 packets (1 oz. each) NESTLÉ® TOLL HOUSE® CHOCO BAKE® Pre-Melted Unsweetened Chocolate Flavor
  • 2 cups granulated sugar
  • 1 cup (2 sticks) butter, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • CHOCOLATE GLAZE
  • 2 packets (1 oz. each) NESTLÉ® TOLL HOUSE® CHOCO BAKE® Pre-Melted Unsweetened Chocolate Flavor
  • 3 tablespoons butter or margarine
  • 1 cup powdered sugar, sifted
  • 1 teaspoon water
  • 1 teaspoon vanilla extract

Directions:

FOR CAKE:
PREHEAT
oven to 325° F. Grease and flour 10-inch Bundt pan. COMBINE flour, baking soda and baking powder in small bowl. Bring water and coffee granules to a boil in small saucepan; remove from heat. Add 6 packets Choco Bake, stir until smooth.

BEAT granulated sugar, butter and vanilla extract in large mixer bowl until creamy. Add eggs; beat on high speed for 5 minutes. Beat in flour mixture alternately with chocolate mixture. Pour into prepared Bundt pan.

BAKE for 60 to 65 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 30 minutes. Invert onto wire rack to cool completely. Once pound cake is cooled, prepare Chocolate Glaze and immediately pour over pound cake. (This will create a smooth look to the glaze.)

FOR CHOCOLATE GLAZE:
MELT
Choco Bake and butter in small, heavy-duty saucepan over low heat, stirring until smooth. Remove from heat. Stir in 1 1/2 cups powdered sugar alternately with water until of desired consistency. Stir in vanilla extract.

    This was the first poundcake I've ever made. I found it easy to prepare and it had great chocolate flavor. I did find it to be slightly dry though. After a day or two of sitting the cake seemed to gain some moisture, so it wasn't as dry as the day it was made. Next time I will add a slight amount of applesauce or lowfat yogurt to give it a more fudge-like consistency. I say the cake was dry, but maybe that's the way pound cakes are supposed to be? I've never made one and I remember my grandmother's were always moist :) You should definitely give this cake a try though.

    I don't understand how anyone could not love this cake!! I just made this for a bbq we went to Sunday and people were having 2nds! I wished the hostess would have asked me to take a piece home! This cake is great because when you look at it when it's done you think OH MY GOODNESS THIS IS GOING TO BE RICH AND SWEET but it isn't. It's just right. I also added about 1/2 - 3/4 cup of sour cream to the mix to make sure it came out moist. Some people complained it was dry. This cake if done right is in NO WAY dry! GREAT RECIPE!!

    After reading the positive reviews, I was disappointed. I found cake to be dry and it would not come out of my pan. Other reviews described how moist it was, but mine was very dry and had to be torn out of the pan. The chocolate glaze, however, is DIVINE and I have made it again to put over vanilla ice cream and other desserts. I am not discouraged, however, and will try other recipes.
