Black Bean, Chicken and Cheese Bake

Ingredients

1 package (11 oz.) STOUFFER'S Welsh Rarebit, defrosted according to package directions
1 can (4 oz.) diced green chiles, drained
1/4 cup milk
1 teaspoon chili powder
8 ounces macaroni, prepared according to pkg. directions
1 cup shredded cooked chicken
1 can (15 oz.) black beans, rinsed and drained
1/2 cup crushed corn chips
1/2 cup shredded cheddar cheese

 

Directions

PREHEAT oven to 350° F. Lightly grease 2-quart baking dish.

COMBINE Welsh rarebit, chiles, milk and chili powder in medium bowl. Add pasta, chicken and black beans. Transfer to prepared baking dish; cover.

BAKE for 25 minutes. Uncover; sprinkle with chips and cheese. Bake for an additional 5 to 10 minutes or until cheese is melted.

    My kids liked this alot. I added mushrooms (I add to almost everything since my kids love them) garlic, mexi corn and a bit of onion. Other than that it was good.

    This is a quick and easy meal that pleases everyone. I opted to use Kuner's Black Beans seasoned with cumin and chili spices. It adds a nice bit of flavor. I also season my chicken with cumin and chili spices and garlic while I grill them. Just to give it a little more zing. For the wimpy folk like me you can always serve with a side of sour cream!

    cheesy chicken black bean casserole

    I massively adapted this recipe for a church group. I started with a gallon can of cheese (restaurant style for nachos), and increased all other ingredients accordingly. I cooked it in an 18-quart roaster pan. After it was all in the roaster, we just started adding ingredients..... Everyone loved it. With leftovers, wrap in tortillas!~

    This dish is super easy to make and tastes excellent! I listened to the other reviewers and substituted some things and it turned out fabulous. For the chicken I used the Ortega shredded Chicken and instead of regular corn chips I used the Guacamole Doritos. Everyone loved it!

    I made this for the first time, but substituted chopped jalapeno's for the green chile's and instead of crushed corn chips, used crushed Guacamole chips. A big hit with everyone - especially if you like spicier dishes. I will certainly be making this one again! Thank you!

    This was a GREAT casserole! I did modify the recipe a bit--I could not find Welsh Rarebit at my grocery store, so I used Campbell's canned Cheddar cheese sauce and it was PERFECT! I also used campanelle noodles instead of macaroni for fun. Also crushed potato chips were fine instead of crushed tortilla chips. Another helpful hint: Ortega makes a seasoned shredded chicken mix (for tacos) that you can find in your grocer's meat section---it's absolutely delicious in this casserole! Thanks again meals.com!
