Brownies With Coconut Frosting
Brownies With Coconut Frosting have a creamy white layer of frosting. A quick turn under the broiler just toasts the coconut adding extra eye appeal. It's amazing what a difference a little broiling makes in this simple and delicious dessert.
- 3/4 cup granulated sugar
- 1/2 cup butter or margarine, cut into pieces
- 2 tablespoons water
- 8 oz. NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Baking Bar, broken into pieces
- 2 large eggs
- 1 cup all-purpose flour
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- COCONUT FROSTING
- 2 cups flaked coconut
- 1 cup packed brown sugar
- 1/4 cup butter or margarine, melted
- 1/4 cup NESTLÉ® CARNATION® Evaporated Milk

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.
HEAT, stirring constantly, sugar, butter and water in large, heavy-duty saucepan just to boiling. Remove from heat. Add broken baking bars; stir just until melted. Stir in eggs one at a time. Add flour, vanilla extract, baking soda and salt; stir well. Spread into prepared baking pan.
BAKE for 16 to 20 minutes or until wooden pick inserted in center comes out slightly sticky. Cool in pan for 20 minutes.
FOR COCONUT FROSTING:
COMBINE coconut, brown sugar, butter and evaporated milk in medium bowl. Spread over cooled brownies. Broil 4 inches from heat for 3 to 4 minutes or until golden brown.

I LOVE Brownies and this is the best recipe ever!! I took this dessert to a potluck at work and they were all gone before I got to get one. Everyone loved them and knew they weren't the box kind. I even did a half of batch without the coconuts on top. No more store bought box mixes!
This has got to be one of the best treats I have ever tasted. It was easy to make and had all my favorite cravings. Chocolate, coconut, and brownies. I added white chocolate morsels to the brownies. Yummmmmmm.

For someone who considers herself to be a connoisseur of brownies, I have tons of brownie recipes. That's what everyone expects me to bring to family gatherings - my most recent brownie "find". This one has to rate right up there close to the top. And I prefer my brownies un-iced; this recipe is the exception to that rule - the icing makes this brownie. Definitely a keeper.
