Caramel and salty peanuts make these Rocky Road Bars memorable! Great for all occasions.
- 1 cup all-purpose flour
- 3/4 cup quick oats
- 1/2 cup granulated sugar
- 1/2 cup butter softened (we recommend Land O Lakes®)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup salted peanuts, divided, 1/4 cup chopped
- 1/2 cup caramel ice cream topping
- 1 1/2 cups miniature marshmallows
- 1/2 cup NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels
PREHEAT oven to 350° F. Grease an 8-inch square baking pan.
COMBINE flour, oats, sugar, butter, baking soda and salt in a large mixing bowl until crumbly. Stir in 1/4 cup chopped peanuts. Reserve 3/4 cup crumb mixture. Press remaining crumb mixture onto bottom of prepared baking pan.
BAKE for 12 to 17 minutes or until lightly browned. Spread caramel topping evenly over hot crust. Sprinkle with ½ cup peanuts, marshmallows and morsels. Top with reserved crumb mixture.
BAKE for an additional 20 to 25 minutes or until topping is lightly browned. Refrigerate for at least 1 hour, or until firm. Cut into bars.

These are really good. I made a double batch with my two year olds help. She is can't have milk products so I used semi-sweet chocolate chips and used margerine instead of butter. I didn't have peanuts so I used walnuts, it still was really good.
