    E. Turner from Portland, Oregon

This has been the way my family has prepared mashed potatoes for years and I will not eat them any other way. Add a little salt for an even better taste. Absolutely Fabulous! Super easy and super tasty. I don't even bother measuring anything, I just mix (use electric beaters to get them ultra creamy) until it gets to the consistency and flavor I love.

Great Addition For Daughter's Recipe Box

    Michelle Bailey from LICKING, MO

My 12 yr old daughter is a blossoming cook. She asked for all the best recipes from her family of great cooks so she can "learn from the best". After I wiped the sentimental tears from my eyes I began gathering all of my favorites to give to her. This mashed potato recipe has been handed down through generations of cooks in my family and is the only way any of us prepare mashed potatoes. I just wanted to share this bit of family tradition. :)

I have always used Carnation in my mashed potatoes, but somethimes I add about 1/2 cup of minced onions, this makes them taste even better. If I have any leftovers, I use them the next morning to make potato cakes to serve with eggs. Take 2 cups potatoes with onions, 1 egg, and about 1/2 cup of flour, mix well and drop by tablespoons on hot gridle, cook 2-3 mintues on each side or until brown. Serve with eggs, any way you want them, I preferred fried and enjoy.
