Cheesy Beef and Green Chile Rice is a super quick skillet meal that's perfect for those evenings when time is at a premium.


  • 1 can (14.5 fluid ounces) beef broth
  • 1/2 cup chopped onion
  • 2 cups instant rice
  • 1 package (10 ounces) STOUFFER'S Welsh Rarebit, defrosted*
  • 1 can (4 ounces) diced green chiles, drained
  • 1 pound ground beef, fully cooked and drained
  • 1 can (14.5 ounces) Mexican-style diced tomatoes
  • 1/2 cup ketchup

COMBINE broth and onion in medium skillet; bring to a boil. Add rice; cover. Turn off heat. Let stand for 5 minutes.

ADD Welsh Rarebit, chiles, beef, tomatoes and ketchup. Cook over low heat for 5 to 10 minutes or until hot and thickened. Add salt and ground black pepper to taste.

*DEFROST Welsh Rarebit in microwave on MEDIUM (50%) power for 5 to 6 minutes.

This dish was easy and GREAT!!! My kids begged me to make it again the next night!! It was one of the best and easiest meals I have ever made, FOR SURE!!

Good stuff.

My husband and I really liked this recipe. Although we could not find the welsh cheese either. I used a small thing of Velveeta, and it was great. The only think I would change would be using the Mexican style tomatoes. It was really spicy, and hard for the kids to eat. But for adults, it's an excellent recipe.

Quick & easy

Whole family loved it!! I made ours with can of tomatos with chiles to add more spice. Welsh Rarebit not available any where around me, so i had to substitute. I used a pasteurized prepared cheese product, because i knew it would melt well.

Not as good as I thought.

After reading all the reviews about how great this dish was, I was definetely let down, as was my family. It was at the most so-so. We all thought it tasted like the filling for stuffed bell peppers. Only my husband had seconds and that was because he was really hungry and covered it in hot sauce.
