Macaroni and cheese like it's supposed to be, tasty with homemade goodness. Children and adults alike will love this classic.

Ingredients:

  • 2 cups dry small elbow macaroni or shells
  • 1/4 cup (1/2 stick) butter or margarine, cut into pieces
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 2 large eggs
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ground white pepper
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) American cheese, cut into pieces

Directions:

PREHEAT oven to 350° F.

PREPARE pasta according to package directions. Return to saucepan. Add butter; stir until melted.

WHISK together evaporated milk, eggs, mustard and pepper in medium bowl. Add to pasta mixture; stir. Add cheddar cheese and American cheese; stir. Cook over low heat, stirring constantly, until cheese begins to melt. Pour into 1 1/2-quart casserole dish.

BAKE for 10 minutes; stir. Bake for an additional 20 to 25 minutes or until bubbly and top is lightly golden. Season with salt.

FOR FREEZE AHEAD:
PREPARE
as above; do not bake. Cover; freeze up to 2 months. Thaw overnight in refrigerator.

PREHEAT oven to 350° F.

BAKE, uncovered, stirring halfway through, for 45 to 50 minutes or until bubbly and top is lightly golden. Season with salt.

    This is my go-to recipe for pot luck gatherings and it always has people asking for the recipe. My only alteration is to the cheeses: 2 cups mild cheddar and 1 cup sharp cheddar. If I feel like it, I'll add some buttered breadcrumbs on top.

    I added more cheddar than it called for and used Pepper Jack instead of American, only because I wanted a little kick to it. I always add more cheese in every recipe I make than the recipe calls for, so it is no reflection of this recipe. It was very good. Even the picky children ate it!

    This sounded like a good recipe and was very well reviewed. My only variation from the recipe was use of high protein, multi-grain pasta in place of traditional. The dish wasn't creamy or gooey, rather dry and grainy.

    I tried this recipe out today and it was quite yummy. I was confused as to why it said to put the mac in a 1 1/2 qt. dish, since that's way too small. I topped mine off with some monterrey and parmesan after stirring. I am a HUGE lover of mac & cheese, and it didn't let me down, although it didn't look much like the picture. I was expecting it to be more creamy. Definitely cheesy and good though.

    We just had this for Thanksgiving dinner. It's is a great recipe...tastes a lot like the mac & cheese my grandmother used to make. I only changed a couple of things. One was, after baking 10 minutes, I salted to taste, then stirred. The other was to top with 1 cup of sharp cheese after that (in addition to the cheese already in the recipe)...when baking for the last 20 minutes. We LOVE cheese!! I'll be making this again very soon...

    I made this for my family and it was very good! I added diced ham to it for a little different twist. This recipe as written is very high in calories and fat. When I make it again, I will substitute low fat cheese and fat-free milk. But over all, it had great flavor and the kids loved it!

    I made this mac and cheese for my son and picky husband and they loved it. It was a tad bit chalky but all in all it was so dang good. I used american cheese for my first time, however, I will try a different brand on my next batch. I think it will make it creamier and less pasty. If it turns out the same way as the first batch it will still be worth it. It was even better the second day heated up.

    I have made this recipe for over a year now. The whole family loves it. I make it for pot luck gatherings. I recently incorporated another recipe that adds 1/2 cup frozen corn, 1/3 cup salsa to the mix, with crushed tortilla chips on top. I wasn't sure how it would turn out, but its great. Try it.

    This mac and cheese was great! growing up in an italian family, i never ate or made this dish, but it reminded me of my grandmother's version of baked cabonara pasta. so I added 4 slices of turkey bacon (uncooked) to the milk mixture and it reminded me of childhood! My husband said the subtle smoky flavor of the bacon made this more of an adult version of the standard kid's meal...he loved it too!
