Hearty and comforting, Chicken à la King goes equally well over pasta or rice. A healthy alternative to fried chicken.

Ingredients:

  • 3 tablespoons butter or margarine
  • 1 cup (about 3 ounces) sliced fresh mushrooms
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
  • 3 large egg yolks, beaten
  • 2 cups cooked, chopped chicken breast meat
  • 2 tablespoons diced pimiento (optional)
  • 2 tablespoons dry sherry (optional)
  • 8 refrigerated biscuits, prepared according to package directions

Directions:

MELT butter in large skillet over medium heat. Add mushrooms, bell pepper and onion; cook, stirring occasionally, for 1 to 2 minutes or until tender but not brown. Stir in flour, salt and paprika. Gradually add evaporated milk. Cook over medium heat, stirring constantly, until mixture comes to a boil.

WHISK 1 cup thickened sauce into egg yolks; pour into saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Stir in chicken, pimiento and sherry. Heat through.

SERVE immediately over hot biscuits.

I made it the other night and I added extra onions, red peppers and some chicken base. I poured it over puffed pastry, it was very good and my husband liked. I'll probably make it again when friends come over. It was very easy to make.

    I found this receipe very bland, it also took a very long time for the sauce to thicken, over 30 minutes, on med heat using my new pans. My husband would not eat this again and he would eat anything. It might work if it had more seasonings.

    Excellent dish, I used puff pasty instead of refrigerated biscuits which presented a more elegant display on my plate. I must share this note, I usually do not cook with evaporated milk because of it's taste, but I attended a Taste of Home cooking show which Nestle Carnation Evaporated Milk was featured and tried a couple of their recipes, I now make sure I have evaporated milk on my shopping list!

    It was cold outside, and i wanted something different for dinner. So I tried this, my daughter who normally doesnt it anything that is alaking raved about her dinner. I made homemade rolls instead of canned biscuits(I have the time) and served this separate instead of on top of each other. I guess looks are deceiving. Thank you for the recipe

    This was really delicious! I cut the butter in half and swapped low fat evaporated milk for the regular. It didn't make any difference in the taste. It was still hearty and satisfying. We tend to like things spicy so I added 1 tsp of ground red pepper when I added the paprika and salt. I served it over rice. I'll definitely make this one again.

My husband and son said it was okay; but I couldn't eat it. The sauce seemed strong, something that I would tend to put with beef, ie, beef stroganoff.

    I found this to be a very convenient way to use up the left-over white meat from store-bought rotisserie chicken (or left-over turkey) that often goes uneaten. I substituted non-fat evaporated milk, and chopped a fresh red bell pepper, rather than use canned pimiento, which my daughter doesn't like. The recipe still turned out great!

    I made this meal for my family and we all HATED it. It is not an especially nice flavor combination, and it similair to eating gravy. Also, it is not a HEALTHY dish at all!!!
