Chicken and Fettuccine with Sun-Dried Tomatoes is ready in 30 minutes and uses delicious and convenient Buitoni pasta. Chopped vegetables and sun-dried tomatoes add extra color and flavor flair. This is perfect for casual entertaining and excellent for a quick family meal too.

Ingredients:

  • 2 packages (9 ounces each) BUITONI Refrigerated Fettuccine
  • 4 (about 1 pound total) boneless, skinless chicken breast halves, cooked and sliced into strips
  • 3/4 cup Italian salad dressing, divided
  • 3 cups chopped cooked vegetables
  • 3/4 cup sliced sun-dried tomatoes in olive oil, drained
  • 1/2 cup (1.5 ounces) BUITONI Refrigerated Freshly Shredded Parmesan Cheese

Directions:

PREPARE pasta according to package directions.

HEAT chicken strips in ¼ cup dressing until warm; toss with pasta, remaining dressing, vegetables, tomatoes and cheese. Season with salt and ground black pepper.

Love chicken, love fettuccine, and really love sun-dried tomatoes, but this recipe didn't put everything together as well as I thought it would. It's a little too oily with the olive oil and Italian dressing.

    My market also didn't carry the refrigerated fettuccine pasta. I also used the dried tomatoes and added my own olive oil. I don't recommend doing that. My family liked the meal very much but we just didn't like the dried tomatoes.

    I had to change some of the items in the recipe. Our market did not carry. Refrigerated Fettuccine, sun-dried tomatoes. Instead I used 8 oz of dry fettuccine noddles & 1 med chopped tomatoe. When I heated the chicken I put the tomatoe in at that time. Prepared the recipe as instructed. Everyone enjoyed, there was none left.

    Great flavor and so easy to make. I did brocolli, peas, and yellow peppers. Just great especially if you have a favorite Italian dressing. But be careful, some dressing taste different when warmed to choose wisely. Lastly, to answer Anita from California's question: to reheat it, I put a skillet on the stove and throw so water in it, just a little bit, then I heat the water up, get it really hot and add just a little Italian dressing, then throw the leftovers back in the pan. Mix around and give it a couple light tosses and you are good. The water gets it warm and the little dressing keeps the flavor since the water might make it bland. Good luck

    I have to say this is one of the best at home made meals that i have had in a long time. The prep time took no time at all. We baked the chicken and then put it into the salad dressing warm and it soaked up the flavor of the dressing. We used a little less salad dressing, i feel that when you make something with italian dressing when you over do it, it seems to over power the meal. so we cut back a little on that, and let me tell you it was a great meal!!! With a family of 5 and 3 of them being picky eaters and when i tell you that is was all gone, that is proof in it self.

    This was a very, very good recipe and I highly recommend it. I heated the chicken and salad dressing with the sun dried tomatoes in a skillet before adding it to the pasta. This really flavored the chicken well. Also, Ken's Northern Italian lite salad dressing was what I used and it really worked very well. No salt or pepper were needed.

    This recipe is definitely worth trying! Cooking the chicken in Italian dressing adds a lot of flavor throughout. I only used half the amount of dressing for the pasta because the olive oil from the tomatoes was plenty.

    This recipe was great! My husband, kids and small grandchildren all loved it. I make 2 variations to it by adding a diced, fried, onion to the dressing before pouring it over the meat, and by using Creamy Italian dressing, instead of the regular Italian dressing. REALLY TERRIFIC!

    This was a very simple dish to make and my family loved it. The recipe called for (2) 9 oz. packages of Fettuccine. I had too much left over eventho I have a family of 4. Unless you have big pasta eaters I would suggest (1) package.

    The receipe is great. The sun-dried tomatoes gives an incredible flavor to the whole dish. But I've tried another method by preparing the chicken. I shredded the chicken raw, marinated with salt & peppar & cornstarch and then cooked them in water. You'll find the meat tastes much more tender.

    I appreciated the simple preparation of this meal. It is something that is easy to throw together and it tastes very good. I ended up frying the chicken pieces rather than cooking them and used frozen vegetables heated in the microwave. The sun-dried tomatoes really add to this meal.

    I expected to like this, but, it was better then that. It has lots of flavor and my husband and kids loved it too. For veggy's I added green pepper, mushroom, and carrot sliced thin. My dad was here when I was finishing it up and he tasted it and loved it, the next morning my Mom called me saying she needed the recipe because my dad had gone home and told her how great it was.
