Ingredients:

  • 2 tablespoons olive oil
  • 4 (about 1 pound total) boneless, skinless chicken breast halves, cut into bite-sized pieces
  • 1/4 cup finely chopped shallots
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup whipped cream cheese
  • 1/3 cup (about 1 1/2 ounces) grated Parmesan cheese
  • 1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons coarse ground black pepper
  • 1 package (9 ounces) BUITONI Refrigerated Linguine (9 oz.)

Directions:

HEAT oil in large skillet. Add chicken; cook, stirring occasionally, until chicken is no longer pink. Remove from skillet; keep warm.

ADD shallots to skillet; stir, scraping up brown bits on bottom. Cook, stirring constantly, until shallots are tender. Whisk in evaporated milk, cream cheese, Parmesan cheese, tarragon, salt and pepper; cook, whisking constantly, until sauce thickens slightly. Stir in chicken; cook until heated through.

PREPARE pasta according to package directions. Pour sauce over pasta; serve immediately.

    This Alfredo-esque sauce nicely complements the chicken and pasta for an authentic Italian meal. The one flaw was that it lost some of it's flavor when it cooled off.

    I made this dish this evening for my girlfriend and her roommate. I'm a twenty two year old college student, who, other than working in a kitchen for a year when I was sixteen, doesn't have a great deal of cooking experience, and this was a very easy to make an absolutely delicious meal. I actually replaced the pasta with the crispy pesto potato(recipe also on this website). I put the potatos in the bottom of a bowl and poured the chicken and sauce over the potatos and it paired perfectly. I will definitely make this again.

    The kids and the adults loved this recipe. I overcooked the chicken a little bit and the sauce became a little clumpy. Next time, I'll watch it closer. Overall it was really good and not at all hard to make.

    Maybe Basil instead of Tarragon?

    I loved the texture and the simplicity of this recipe, however, I guess I just found out I'm not a fan of tarragon because I just didn't like the flavor of this dish. I bought fresh tarragon and found that it was very strong. I'm a fan of basil so perhaps I'll try this again but with basil instead.

    This recipe is very very yummy!!! I have made this recipe several times since I've gotten it and I love it. I would reccommend adding some bacon, brocoli or even ham to make it even more delicious. The Tarrogon adds the perfect touch.

    It was perfect. Follow the directions as stated and use the proper amounts and everything will turn out perfectly as it did for me. Tastes Great. Those who say it lacks anything or is too strong did not follow the directions well enough or have no taste for very good food. This is extremely good and tasteful and simple to make. I will be making this many times from now on.

    I truly enjoyed this dish. I cooked it for a group of 20 people for a farewell party. I couldn't be there for the beginning, but I was to return within 1 hour. When I got back to the party 1 1/2 hours later, the dish said "farewell" to me.     This dish was OK, but the sauce was a little too thick. The flavor was good, but the texture was too creamy, and a little hard to get down. Maybe next time instead of canned milk, use skim, or 1% to thin the sauce a bit. My kids liked it though.

    I was skeptical at first, but this dish is awesome. Easy to prepare and everyone in the family loved it, including the children. The market didn't have scallions so I substituted 1 clove of garlic (half in cooked chicken and half in sauce). We will definitely be having this again.

    I made this last night for dinner for my brother, his friends, mum and dad. Everyone enjoyed it so much! I cooked the chicken completely and then kept it aside and let those who wanted it add it to their meal, as a few of us were vegetarian. This pasta dish was great even without the meat ... the Tarragon gave the meal a very distinct and different flavour... I do suggest however that you chop the tarragon very finely ... and if using bought dried herbs make sure you chop them up a bit more ... This dish was lovely ... I will definitely be making it again.

    I sauteed the onions and used minced garlic in this recipe and it came out great! Also, you can use spaghetti noodles if need be. Regular milk instead of evaporated milk can be substituted, but use the non fat or low fat kind. My kids loved this as well.

    My husband and kids (ages 2 and 4) really enjoyed this chicken dish. I used dried tarragon instead of fresh. I omitted the shallot and added one small chopped onion, one crushed clove of garlic, and sliced fresh mushrooms that I cooked along with the onion. Leftovers were good too! Thanks for the recipe.

    The taste and texture of the cheese sauce was great. I used dried tarragon instead of fresh. This is the first time I've ever cooked with the spice and I plan on adding it to other dishes in the future. It gives the sauce an added kick that my husband and I really enjoyed!

    This was an excellent dish. I used garlic instead of the shallot. I just cut up 1/2 of a large garlic clove and sauteed with my chicken. I used more parmesean cheese as well. Also, if you can't find fresh Tarragon, dried Tarragon works just as well. This dish tastes a lot like Chicken Alfredo. Wonderful!
