These cute Chili Cups are yet another way to serve chili! Garnish with sour cream, green onions and black olives for an extra special treat.

Ingredients:

  • 1 can (15-oz.) chili with beans
  • 1 can (12-oz.) refrigerated biscuit dough
  • 2/3 cup shredded cheddar cheese

Directions:

PREHEAT oven to 400°F.

PLACE 1 round of biscuit dough into each of 10 muffin cups, pressing dough into bottoms and up sides of cups. Spoon 1 heaping tablespoon chili into each cup; sprinkle with cheese.

BAKE for 12 to 15 minutes or until biscuits are browned.

    I tried this recipe last night, making the chili & bisquits from scratch. I have a couple of VERY fussy eaters who have never tried chili before. I made 16 cups for 5 of us, and we RAN OUT!!!     These are super easy but kind of bland and boring. I would rather make chili and cornbread seperately. I guess the canned chili just isn't spicy enough for my husband and I.

    This is a quick, easy way to make a dish that the kids like. The muffin sized portions seem to appeal to them. I have a large family so we doubled the recipe, but ended up having left overs. We slipped them into a freezer bag and froze them. About 1 minute in the microwave makes them a quick lunch or even breakfast on the go.
