Chocolate Chip Shamrocks are delicious cut-out cookies containing chocolate chips. These will make everyone's St. Patrick's Day special. Decorate them with green icing and sprinkles.

Ingredients:

  • 1 cup (2 sticks) butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 large egg yolk
  • 2 1/2 cups all-purpose flour
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
  • 1 container (16 oz.) prepared vanilla frosting, colored green if desired
  • 1 container green coarse sugar or candies

Directions:

BEAT butter, brown sugar, granulated sugar, vanilla extract and salt in large mixer bowl until creamy. Beat in egg yolk. Gradually beat in flour. Stir in morsels. Shape dough into 2 round discs; wrap in plastic wrap. Refrigerate for about 1 hour or until firm.

PREHEAT oven to 350° F.

ROLL each disc to 1/4-inch thickness between two sheets of waxed paper. Cut into shamrock shapes; place on ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Spread with frosting; sprinkle with coarse sugar.

    I agree with others who stated it was difficult to roll out dough with the chips but I thought of holding off on adding the chocolate chips then just rolling out the dough before cutting out my shape. After doing that, I pressed in chocolate chips to my heart's content. It does take alittle longer but you can make sure that you have enough chips in every cookie rather than have more in some and less in others. Kids love to help push the chips into the dough so makes quite a kid pleaser!

    Cut-out style chocolate chip cookies are a cute idea. Once baked they are cute and they do taste good. However, I agree with other reviewers who conclude that it is difficult to roll the dough and cut out the shapes because of the chips. Since drop chocolate chip cookies are less work and ALWAYS get raves, I'll continue to make them in the future when I want chocolate chip cookies. I'll save cut-out style cookies for regular sugar cookie dough. Due to the trouble the chips cause during dough rolling and cutting, I probably won't make this recipe again.

    DIFFICULT TO CUT OUT

    I HAD A PROBLEM ROLLING OUT THE DOUGH, THEN DIFFICULTY USING THE COOKIE CUTTERS. I BELIEVE THE PROBLEM IS WITH THE CHOCOLATE CHIPS ALTHOUGH SMALL THE "NORMAL" CUTTERS WOULD NOT CUT THROUGH THE CHIPS, HAD TO USE AN OLD METAL CUTTER TO GET THROUGH THE DOUGH. I MAKE THOUSANDS OF COOKIES AND THIS WAS JUST TO MUCH WORK - THEY WERE VERY TASTY HOWEVER!

    Hard to roll

    I had the hardest time getting these to roll out. I was using a cute dog shaped cookie cutter and ended up switching to a simple heart shape because it was near impossible to get the dog shape out of the cutter whole. They were okay cookies, but not a recipe I will do again.

    My Daughter and I enjoyed making these together. The dough was very easy to prepare and quick to bake up, just don't let the dough sit to long in the refrigerator or it will get hard. Our favorite part was decorating with frosting, which I highly reccomend.

    These were quite difficult to roll out. The end results were worth it. Best tasting chocolate chip cookies I have made. It would be easier to just put in a pan and cut bars. I will try them again with easter egg cut-outs. Maybe they will be easier than a shamrock. Will definitely try them again.

    I like to make something to make a holiday special. I made these the other day and even though it take time to chill and roll they were fun. I ended up having to take two days to do them since I work. I gave some to my daughter and husband and my mother. My husband liked them so much he took some to work. That makes it even more great that he would want to show them off at work!

    A Fabulous St Patrick's Day Cookie

    This cookies are fabulous. I usually refrigerate them overnight for best results, and these cookies then rolled perfectly. The Nestle' mini morsels were super in this recipe. I made my own cream cheese frosting, and decorated the cookies with the green sugar. They were so festive, and everyone just loved them. A real keeper, and I will certainly make them again.

    The recipe was easy to follow. I thought the 1/4" dough was too thick. Thinner cookies seemed to bake and taste better. I only had a large cookie cutter in the shape of a shamrock but I think smaller cookies would have been better. The cookies were only good with the icing. I am not sure I would make these again. Thanks.

    I made these cookies for the St. Patrick's Day Parade festivities in Chicago. It was our big Irish weekend! The Shamrock Cookies were a hit! Everyone loved them and wanted the recipe.
