Chocolate Cocoa Frosting

Ingredients

1/2 cup (4 envelopes) Rich Milk Chocolate Flavor NESTLÉ Hot Cocoa Mix
1/3 cup hot water
1/3 cup butter or margarine, softened
1 teaspoon vanilla extract
1 pound powdered sugar

 

Directions

COMBINE cocoa mix and water in large mixer bowl. Beat in butter and vanilla extract. Gradually beat in powdered sugar until smooth and creamy. Add more hot water if frosting is too thick.

    This was quick and easy especially since I had all the items I needed in my pantry already. The only thing was it was a tad too sweet, I think because of the one pound of confection sugar, I will make this again, but I think I will cut the sugar down to one half of a pound.     I had forgotten that I had promised to bring cupcakes to work yesterday morning. I was able to make and bake the cupcakes LATE,the night before, but did not have anything (or so I thought) in the house to make icing with. I remembered once searching under FROSTING in NESTLES recipes, and seeing something made with everyday kitchen products- so I went back and found this recipe. IT WAS A LIFE SAVER! Not only was it tasty, but I had everyhting right in my kitchen! I have now added this one to my RECIPE FILE - as it will be used again! (P.S. The cupcakes were a HUGE hit).
