Ingredients:

  • 1 3/4 cups (11.5-oz. pkg.) NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels
  • 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 3/4 cup heavy whipping cream
  • 1 tablespoon peppermint extract
  • 1 1/2 cups finely chopped walnuts, toasted

Directions:

LINE baking sheet with wax paper.

PLACE milk chocolate and semi-sweet morsels in large mixer bowl. Heat cream to a gentle boil in small saucepan; pour over morsels. Let stand for 1 minute; stir until smooth. Stir in peppermint extract. Cover with plastic wrap; refrigerate for 35 to 45 minutes or until slightly thickened. Stir just until color lightens slightly. (Do not over mix or truffles will be grainy.)

DROP by rounded teaspoonfuls onto prepared baking sheet; refrigerate for 10 to 15 minutes. Shape into balls; roll in walnuts. Store in airtight container in refrigerator.

VARIATION:
After rolling chocolate mixture into balls, freeze for 30 to 40 minutes. Microwave 1 3/4 cups (11.5-oz. pkg.) NESTLÉ TOLL HOUSE Milk Chocolate Morsels and 3 tablespoons vegetable shortening in medium, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted. Dip truffles into chocolate mixture; shake off excess. Place on foil-lined baking sheets. Refrigerate for 15 to 20 minutes or until set. Store in airtight container in refrigerator.

    I absolutely love these truffles. No one can believe that I know how to make truffles, so I keep it a secret how easy it is. I always have to take some sort of desert to christmas parties and family functions and these are always a hit. You have to set aside quite a bit of time to make them, but they are definately worth it!

I did leave out the mint extract just because I ran out and used vanilla instead and they were still wonderful. They are very easy, and the best tasting chocolate you will ever make. I coat my truffles with dark or light chocolate, and decorate according to flavor. The 1st batch I made with the original recipe, the 2nd batch I made with Nestles white chocolates and added maple flavoring to them then dipped them in melted chocolate and the 3rd batch was with the white chocolate and I added coconut flavoring and the 4th batch had lemon flavoring, they were all wonderful, I froze some of each batch for us to enjoy.

    These truffles were not only easy, but GREAT! For variations, leave out the peppermint extract and substitute orange, chocolate or raspberry extracts or a teeny amount of amaretto or chambord for flavoring. I also like to roll the truffles in: 1/ ground up candy cane (food processor) for the peppermint truffles AND for ALL OTHER FLAVORS roll each truffle in one of the following : 2/ NESTLES COCOA POWDER 3/ shredded coconut 4/ finely ground up nuts 5/ chocolate jimmies (sprinkles) 6/ colored sprinkles. Not only will they make a nice presentation, but the variety of flavors from the one basic recipe allows you a lot of versatility. Place each truffle in an individual paper candy cup and make an entire tray of terrific truffles for any occassion. EVERYONE will love you for it.

This time, I'll use an extract other than the mint, maybe orange or raspberry. To dip the truffles I use a plastic fork with the middle tine removed. The truffles stay rounder and don't get soft from the heat of my fingers.
