Chocolate Peppermint Cheesecake

Ingredients

2 cups ground chocolate-mint or chocolate sandwich cookies (such as Oreos Mint N' Cream or Oreos)
3 pkgs. (8 oz. each) cream cheese, at room temperature
3/4 cup granulated sugar, divided
3 large eggs
1 cup Peppermint Mocha Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer
1 container (16 oz.) sour cream, at room temperature
1 teaspoon vanilla extract

 

Directions

PREHEAT oven to 350° F. Grease bottom and side of 9-inch springform pan.

PRESS cookie crumbs onto bottom of prepared pan. Place in freezer for 5 minutes.

BEAT cream cheese and 1/4 cup sugar in large mixer bowl until creamy. Beat in eggs one at a time, beating well after each addition. Gradually stir in Coffee-mate. Pour filling into crust.

BAKE for 45 to 50 minutes or until edge is set but center still moves slightly.

COMBINE sour cream, remaining sugar and vanilla extract in medium bowl; mix well. Spread over surface of warm cheesecake. Bake for 5 minutes. Cool on wire rack. Refrigerate for several hours or overnight. Remove side of springform pan.

NOTE: Try substituting Hazelnut Flavor or Irish Crème Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer.

    Fun Cheesecake Flavors

    Very easy and tasty recipe for cheesecake. I also made it with a graham cracker crust and eggnog flavor Coffee-Mate. I love the holiday Coffee-Mate flavors and was excited to find a recipe that uses it as an ingredient.

    I recently made this cheesecake for my father-in-law's birthday. It was such a big hit. The only thing that would have made it better would be adding a little more peppermint flavor. I added crushed candy canes to the top to give it a pretty pink shimmer. Overall this recipe was very good.

    I followed the recipe but substituted the Peppermint Mocha Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer with Irish Crème Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer, mixed in a little green food coloring & BAM BAM instat Irish chocolate Cheesecake. Not only pretty but yummy yummy good.

    Great holiday dessert!

    Very good cheesecake! I saw a peppermint cheesecake on a television to purchase for over $40 plus over $15 shipping! I made this 2 times as you can get two cheesecakes from one peppermint/mocha creamer. I love peppermint so I added 1/2 teaspoon peppermint extract to the batter and 2 drops of red food coloring to make it a pretty pink color. Will definitely make again next holiday season!

    Chocolate Peppermint Cheesecake with Variations

    This was my first time making this cheesecake and I had to improvise from the recipe a little. 2 days before christmas, I couldn't find the Peppermint Mocha flavor Coffee creamer. I decided to try to use a Mocha flavor with peppermint extract. Since again it was 2 days before christmas, peppermint extract also could not be found. I ended up with Peppermint Schnapps, which actually turned out very good but with a very mild peppermint flavor, even though i'm not sure how much you can taste the Peppermint in the original recipe. It was great even with my variations. I made two, one for my family and one for my in-laws.

    This sounds very good. I was just dreaming about a chocolate peppermint cheesecake. I've tried peppermint bark and peppermint fudge cookies, and I wondered where I could buy a peppermint cheesecake. Now I can make one.
